Fish Taco Bowls
Fish Taco Bowls. I just adore complete meals served in a bowl. For breakfast, lunch or dinner. And I don’t discriminate against ingredients based on the time of day. As long as they are fresh and flavorful…I’m a happy girl.

Going Green Smoothie {a Trial Run}
Here’s to a fresh and healthy start to the New Year. I’ve only had my new Vitamix blender for a few days now but I’m certain I’m going to love it. I’ve made Orange Vanilla Vinaigrette and Thai Pumpkin Soup using recipes from the Vitamix cookbook. Both were delicious. This morning I made this Going Green Smoothie without a recipe. We’ll call it a trial run.

Mexican Street Corn
Oh my word. Mexican Street Corn makes me want to board a plane and head to Mexico. Wait, I just made this incredible corn at home in 30 minutes.

Vietnamese Beef Pho
Vietnamese Beef Pho. Let me just say this about that. I don’t think I’ve ever delivered so much flavor with so little effort. When I got home from work I assembled everything I needed, put the broth and seasoning on to simmer, all in about 5 minutes. I did also pop our beef filet into the freezer, which later helped with getting a nice thin slice.

Guacamole Deviled Eggs {with Crispy Bacon}
Guacamole Deviled Eggs with Crispy Bacon. One week to go before we complete our first year of ‘food blogging.’ A term I hesitated to use for most of this year. On one hand it was hard to put myself in that category, with so many very talented writers, recipe creators, and photography wizards. And on the other hand, I had always thought of a blog as a personal diary of sorts, something I couldn’t envision Lemony Thyme becoming last June. However, as time progressed I began to open up a bit. A simple reference from a friend or family member about something I wrote in a post, felt good. It made me…

Blackberry Margaritas
Blackberry Margaritas When the blackberries are in season and look this good, I’m hunting recipes to make. This Margarita recipe from Cooking Light was just what I was looking for. Just so happens it makes four two…so I recommend inviting a friend, like I did.

Dark & Stormy Cocktail {and Night}
The Dark & Stormy Cocktail. I was driving to work this morning listening to the radio when I detected a bit of excitement in the weatherman’s voice. The kind he gets when a storm is brewing. It’s the start of tornado season and the weather conditions are just right for late afternoon thunderstorms. He cautioned his radio audience….be prepared for a Dark & Stormy Night on your evening drive home.

Cowboy Caviar & A Country Christmas Party
Whipped up a batch of Cowboy Caviar in honor of tonight’s Country Christmas themed Annual Company Party. I can not wait. While we work (and play) hard all throughout the year, the Christmas Party is a chance to spend an evening with my second family and their spouses. And inevitably make memories that will last us until next year’s party :) Did I mention, I can not wait!

Cilantro Lime Shrimp & Avocado Tostadas {Weight Watchers}
It’s funny how one abundant ingredient can spark all kinds of recipe inspiration. For us, it’s what seems to be a never ending bag of Corn Tortillas taking up space in our fridge drawer. Thumbing through my cookbook rack yesterday, I came across my Weight Watchers cookbook and well, let’s just say we may need to visit a couple of these recipes heading into the holidays ;) Tonight we’ll start by adapting a WW Shrimp Tostadas recipe.

Bodacious Roast Chicken {Mexican Style}
We, like most families, go through “What’s for Dinner” ruts from time to time. Last week frankly was a bit of a challenge. Thank goodness our Ahi Tuna Salad with the amazing Creamy Avocado Cilantro Lime Vinaigrette came through at the end. And it’s funny because that salad never really knew where it was headed until the very last minute. Besides the dressing, the other ingredient that stood out was the baked tortilla shell. And so we decided that Taco Salads were in our near future. To be exact, we agreed Roast Chicken {Mexican Style} on Tuesday and Chicken Taco Salads on Wednesday. Looks like it’s going to be a good week!!
