Beef Stew

It’s really hard to top a nice big bowl of Classic Beef Stew.  Slow braised pieces of beef and root vegetables, cooked in a rich beef broth until tender.  Served in big bowls with crusty bread.

I first tackled making Irish Soda Bread on St. Patrick’s Day.  Much easier than I had expected, made from ingredients we typically have on hand.  AND can be ready in 35-40 minutes, which is nice.  Especially when the Classic Beef Stew you’re making is almost finished and you realize you have no crusty bread, which is practically an ingredient on it’s own. Two ingredients, so much flavor.  Grilled Bacon Wrapped Shrimp.

Two things you can generally find in our freezer are bacon and shrimp.  Bacon because we use it to add flavor to many dishes, but don’t often eat it as…well bacon.  We keep frozen shrimp on hand for easy week night meals or in case we’re invited to an impromptu gathering and need a quick & tasty appetizer.  Grilled Bacon Wrapped Shrimp is just that.  We’re open to invitations. Thai Beef Salad

Thai Beef Salad.

What a lovely way to enjoy a good piece of beef.  I know most recipes call for using lean flank steak.  And while I’m sure that’s very nice on this salad, on the rare occasion that we have steak, I prefer the most tender cut I can find.  And that would be a filet.  Grilled to medium-rare.  Sliced nice and thin.  It was that thought alone that inspired this recipe post.  Every bite of this Thai Beef Salad is a flavor explosion.
