The key to bringing big flavor to these Southwest Vegetarian Tacos is to oven roast the veggies. Virtually any vegetables will work in these tacos, but I love sweet potato, onion and zucchini as my base – I added corn and jalapeño to give it a nice Southwest flavor flare.

The key ingredient are the canned San Marzano tomatoes, not at all difficult to find but should not be replaced by regular diced tomatoes. San Marzano are whole plum tomatoes with very few seeds that are renowned for their balanced flavor – rich tomato taste that is slightly sweet and less acidic.
Hands down this Smoky Sweet Potato Hummus has become my go-to snack. It’s the right mix of savory-slightly sweet that when paired with crispy chips or veggie sticks I dare say is the perfect snack!

My latest classic dish turned into a meatball lovefest are Chicken Piccata Meatballs. Take all those Chicken Piccata comforting flavors and roll them up into meatball heaven. Enter capers, Parmesan cheese, lemon, garlic, fresh parsley. Oh and then let them bathe in a glorious caper butter wine sauce to soak in even more deliciousness.
