Our Served from a Glass category is lacking substance. Which is kinda funny since I was much more of a cocktail creator than foodie not that long ago. I do take requests :) and received a “cocktail” request walking out of the office door on Friday afternoon. Here is my favorite fresh libation.

Not Just Any Saturday Adventure…
We’re approaching the second anniversary of my mom’s passing. I think about her every day and know she, the writer, editor, story teller, photographer would have been a masterful blogger. Every Saturday for many years we would set out on Adventures. While some folks would have simply labeled these outings as running errands….they were much more than that to us.

In the case of Boston Baked Beans my mom not only had it up her sleeve but it was engrained in her memory. I’m eternally thankful that she took the time to write it down for me to share with generations to come.

Chicken & Cashew Lettuce Wraps. Do you ever pick something up to take a bite and quickly realize there’s no putting it down? It’s just too yummy to stop or too messy to chance a reload. I find this is the case with most cupcakes, wrap sandwiches, corn on the cob, tacos, and definitely lettuce wraps. This dish needs to be eaten at the table, with family & friends, where you can lean over your plate, lick your fingers, and not worry about a napkin until you’ve taken the last bite.

Salmon Burger on Toasted Onion Roll
It’s Monday. Honestly I did not have a What’s for Dinner plan until leaving work at 5:30 pm. Salmon is always a favorite go-to protein for us and readily available. It’s the “if all else fails, we can always have Salmon” and we know it will be a good meal. I recently tried something new with Salmon ~ Salmon Meatballs. They were so moist and flavorful and pop in your mouth get me another good that we had to revisit that recipe.

Herbed Tomato Salad
Fresh Summer Tomatoes… they are so capable on their own…they need no sidekicks, no opening act. I begged forgiveness when I added a few simple ingredients…fresh basil & lemony thyme, balsamic, olive oil, thin sliced red onion, croutons, and fresh cracked pepper. Thank you tomato gods…we honor you.

Cauliflower Cheese Grits {Low-Carb Side}
From time to thyme we go on a low-carb kick. Cauliflower has become the new potato in our house. We’ve made Cauliflower Mash for years, but have recently begun turning it into other side dishes, like Cauliflower Rice, Cauliflower ‘Potato’ Salad, and Cauliflower Cheese Grits.

Sesame Brussels Sprout Slaw
Sesame Brussels Sprout Slaw We love slaw at our house and change up our recipe often. But this version was very different. The sesame oil & seeds added that yummy nutty flavor which worked so well with the balsamic. We’ll surely have this one again.

I was asked yesterday “where do you get your recipes?” The short answer is “everywhere.” Certainly the Internet offers unlimited options, however I love my cookbooks, read cooking magazines, talk to people about recipes, sample food offerings every chance I get, and often offer myself samples “Want a Bite Lib?”

Seared Scallops with Macadamia Cilantro Pesto
Just a little appeteaser… Start with beautiful sea scallops, rinse and pat dry. For these I lightly rolled the edges of the scallops in some sea salt and freshly cracked pepper. Set aside while you make pesto.
