Eggplant, Zucchini, & Squash Curry
A few years ago I took on a new level of interest in cooking. I became a student of spices, learned which spices went best with which ingredients, and tested different combinations. During that particular Autumn season soups, stews, chilis, and sauces were transformed. Our kitchen was filled with amazing aromas and our favorite soup bowls filled with new fresh flavors.

Zephyr Squash Summer Salad
I could not wait to get home to my farmers’ market bounty last night. Most excited about using zephyr squash for the first time and decided on this salad after visiting the sites of Zephyr Farms & The Kitchn. I simply cut the squash into ribbons and then steamed it until just tender…it still had a nice crunch to it.

Love the Farmers’ Market
Had the best time this morning at the local Farmers’ Market. Not only am I so excited about findng some varieties I’ve never tried (yellow zucchini & zephyr squash) but there in the middle of a long row of booths was the wonderful lady who makes my new favorite sweet bbq sauce – CharSu Sauce.

Coconut Almond Shrimp with Sweet & Spicy Orange Sauce. Tonight marks the end of the 4th of July Holiday week. And if you’re anything like me, you’ve been milking it for everything it’s worth. We have spent the last 36 hours on “vacation” at our good friend’s new lake home. Tucked away miles from the hustle and bustle (yet less than an hour from home), sits their beautifully peaceful retreat. We rolled in jet ski adventures, with big laughs, a great dinner, porch sitting, and Breakfast at Wimbledon. Just perfect!

Cuban Stuffed Pork Chop {with Sweet Potato Chips}
Sometimes a recipe comes to you… Wow! What kind of intro is that?! Recipes come to me in my sleep, in line at the seafood counter, checkout counter, bookstore, kitchen table, pillow talk, water cooler….love to eat. I completely love talking about food. My co-workers are amazing inspiration. We eat together, share leftovers, and stories of recipe incarnations. Today I went to the grocery store at noon to pick up lunch for a few girls in the office. At the deli counter were prepared Cuban Sandwiches. I love a Cuban! And that’s how it happens. How can I deconstruct a Cuban sandwich and turn it in to “What’s for Dinner?”

Thai Red Curry Mahi Mahi
I only discovered Thai Red Curry a couple years ago while on vacation in Puerto Rico. Our hotel was directly across the street from a gem of a restuarant that featured both Thai and Indian dishes ~ neither of which we were too familiar with. Going completely on the recommendations of our server we ordered Pla Choo Chee (Thai Red Curry Fish).

Skillet Veggie & Herb Hash with Fried Egg. It’s a beautiful July 4th morning. After a week of sweltering heat there’s actually a breeze across my back porch. I’m so excited to make my first skillet dish. I scored finding two of these 5″ cast iron skillets at a thrift store (I think I actually smiled out loud at the sight of them). For the hash ~ I lightly browned in butter red & white onion, cubed butternut squash and baby potatoes. Then I added 1/2″ water, covered them and simmered on low until they were just tender and the water had evaporated. I added a little more butter with fresh…
