Mexican Casserole {Eat Out of the Fridge/Pantry Week}
The week following Thanksgiving was epic in terms of leftovers. The pantry doors were bulging like the doors on a pre-teen girl’s closet. The fridge was packed full of 1/2 used ingredients begging for a purpose. And fortunately for us, every food blogger I follow was offering up solutions. This Mexican Casserole was inspired by this beautiful recipe I found on From Away.

Salmon BLT Salad {with Avocado Aioli}
I realize that a Salmon BLT Salad with Avocado Aioli is not much of a recipe. And possibly not worthy of a post. However, it was really good. And the fact that it was very basic, down to packaged croutons…made it about the best thing we had eaten in at least 3 days.

When I made the decision to dedicate Winter Thyme to Spice Exploration I began by playing with my spices….literally. I transformed them into a Winter Thyme ‘Wind.’ Touching each one, taking in their individual aromas, admiring their earth tone colors, and seeing how beautiful they looked together. It’s soup weather in our neck of the woods AND the NFL Playoffs are under way. So when pondering What’s for Dinner, I came up with the combination of Buffalo Wings & Chicken Soup. Do you ever envision a recipe and think to yourself brilliant!, this is the most brilliant creation anyone has ever imagined. I will make it and they will name it after me. But just to be safe, let’s do a quick google search just to be sure someone else hadn’t already thought of it. For a fleeting moment this Buffalo Wing Chicken Soup was my chance for fame. Garlic Parmesan Roasted Chickpeas {Healthy Living}
Healthy Living is something we should all aspire to. I’m not crazy about the word diet, unless a doctor puts you on one. For me, and many I talk with daily, we just need to bite the bullet and eat right and exercise…aka a little Healthy Living. I’m about to enter airport world, lethal for Healthy Living (just behind Amusement Parks and County Fairs). Seriously, someone please start an airport restaurant franchise featuring healthy living options, that are quick and portable. I’m taking these Garlic Parmesan Roasted Chickpeas with me…baby steps.

I’ve mentioned before how much I adore my hair stylist. And I think you also know by now that I LOVE to talk about food. Roasted Vegetables {Cauliflower & Brussels Sprouts the unsung heroes}
This past winter we began roasting almost all our veggies. We started out with potatoes and onions tossed in olive oil. Then we added zucchini, which led to cherry tomatoes and eventually we got brave enough to add Brussels sprouts, a formerly avoided at all cost vegetable. Had no idea these could be so amazing…. we actually ate Brussels 2-3 times a week for months.

Smoked Turkey & Brie Grilled Cheese with Apples & Spinach {and Apple Butter}
Recipe inspiration…hmmm toss up between one of those amazing Artisan Grilled Cheese Sandwiches (which almost implies healthy…hehe) and an unused hunk of Brie in the cheese drawer.
