Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}.

While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make.  Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil.  Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper.  Seal the foil making a packet.

Add the broccoli packet onto the oven rack next to your potato for the last 30 minutes of baking.  When ready to serve, sprinkle grated cheddar cheese over your broccoli and load up your baked potato.  One more variation that shows just how versatile a good ole’ spud can be.
