These beautiful mini-Sweet Peppers were smiling at me as I strolled through the produce isle. How could I resist their vibrant ‘happy’ colors? When it’s January, and the tornado sirens are echoing in the distance and torrential rains are beating on the window, a little ray of sunshine for dinner seemed just right. So we kicked up our recipe with a little spice and created Southwest Stuffed mini-Sweet Peppers {with Quinoa & Spicy Turkey Sausage}.

Grilled Rosemary Ham & Gruyere Cheese Sandwich {with Sundried Tomatoes} I had a hankering for a grilled cheese for lunch today (I feel like I’ve used that line in a post recently…hmmm). On my short drive from the office to the grocery store my mind was racing through a mental inventory of what ingredients I had to work with at home and what I would need to pick up. I knew we had a nice hunk of Gruyere cheese and so I decided it would be a grilled ham & cheese. Simple, yet always delicious.

Beef Tagine with Butternut Squash {B is for Braising}
Santa Claus is quite perceptive. I mean he brought me a Terracotta Tagine for Christmas and it wasn’t even on my list. How did he know?!! Working perfectly into our Winter Thyme Spice Exploration plan, we put that baby to good use tonight. We turned a basic beef stew into a fragrant adventure with this Beef Tagine with Butternut Squash. Paprika, cinnamon, ginger, and cayenne came together with tangy tomatoes and sweet butternut squash to create a BIG flavor sauce. The beef was tender, as slow braised beef should be, and completely infused with Moroccan love. I’m smiling.

Boston Cream Pie Martini {National Pie Day}
When I discovered it was National Pie Day I also discovered that I do not have a single “Pie” recipe on Lemony Thyme. I like pies, on occasion or for an occasion. But I’m not drawn to them. Pie crust on the other hand speaks to me. And filled with something savory…well that’s when a pie becomes personal. All that being said, I’m sharing a Boston Cream Pie Martini today. Go figure.

When National Oatmeal Month collides with National Buttercrunch Day…the world is a better place. This is my last full day visiting with my family in CT. During coffee & pj time this morning, my sister Sarah and my niece Maya and I came to a unanimous decision. Buttercrunch Ice Cream sandwiched between Oatmeal Butterscotch Cookies could quite possibly be phenomenal.
