Blackened Blue Cod with Cauliflower Cheese Grits
I was asked yesterday “where do you get your recipes?” The short answer is “everywhere.” Certainly the Internet offers unlimited options, however I love my cookbooks, read cooking magazines, talk to people about recipes, sample food offerings every chance I get, and often offer myself samples “Want a Bite Lib?”

Seared Scallops with Macadamia Cilantro Pesto
Just a little appeteaser… Start with beautiful sea scallops, rinse and pat dry. For these I lightly rolled the edges of the scallops in some sea salt and freshly cracked pepper. Set aside while you make pesto.

Zephyr Squash Summer Salad
I could not wait to get home to my farmers’ market bounty last night. Most excited about using zephyr squash for the first time and decided on this salad after visiting the sites of Zephyr Farms & The Kitchn. I simply cut the squash into ribbons and then steamed it until just tender…it still had a nice crunch to it.

Succulent Scallops Wrapped in Bacon
Succulent Scallops Wrapped in Bacon. Without a doubt scallops are my most favorite shellfish, especially big sweet sea scallops. If they didn’t cost quite so much I believe I could eat them every day. There are so many ways to serve scallops but wrapped in bacon is a classic that will never go out of style.

How To Make Caramelized Onions
I never realized how often I include caramelized onions in my cooking until I started to post my recipes. Caramelizing anything intensifies the flavors. Intense flavors are good. Here’s an easy step by step of Caramelized Onions.
