Steamed Asparagus with Fried Egg & Shaved Parmesan Cheese.
Cappuccino got her here….but this dish kept her at the table. My daughter favors vegetarian dishes and because of her I’m drawn to recipes that I know she’ll enjoy.
I saw this dish in a magazine while waiting at a doctor appointment. Let me just say this about that. I can put off a doctor appointment with the best of them. I hate them, avoid them to the bitter end. The only thing that makes them marginally tolerable is the vast array of magazines. I LOVE food magazines…..love them. And with my photographic memory (amazing iPhone camera) I don’t have to buy them all. (Not sure if this is a copyright violation, but I snap pictures of recipes and food pictures every chance I get….shhhh).
- ½ lb. asparagus
- 1 Tbl. olive oil
- 4 eggs
- 2 Tbl. shaved Parmesan cheese
- chives, snipped
- lemon zest
- salt & pepper
- Remove though ends of asparagus. Then steam asparagus until just tender, about 5-7 minutes, depending on size.
- Fry eggs in olive oil to your desired liking.
- Serve fried eggs over steamed asparagus. Sprinkle with shaved Parmesan cheese, snipped chives, a bit of lemon zest, salt & pepper.
