We’ve made Chicken Enchiladas Verde, homemade corn chips & salsa, and now these yummy and super easy Jalapeño Popper Pizzas. Coming soon Cilantro Lime Shrimp & Avocado Tostadas. Spinach & Mushroom Stuffed Turkey Tenderloin {Applewood Smoked}
I woke up today, recognizing I was feeling really good in my pj’s and realizing my fridge had a mixed bag of unused (although thoughtfully selected) ingredients. It’s been one of those weeks….the kind that kicks you in the butt and says snap out of it. Still in my pajamas as I write this post, I am preparing Spinach & Mushroom Stuffed Turkey Tenderloin. Never left the house ergo never entered a grocery store = Winning!! And yes, I’ve snapped out of it.

The Classic Mojito {TGIF}
I think tonight is a great night for a Classic Mojito. I believe we’ve got a touch of Indian Summer breaking through what has been a crazy week of weather and my fresh mint is still thriving in it’s own private garden. I had my first Mojito several years ago while vacationing in Puerto Rico. Already a rum lover….I was quickly hooked. I’ve since made Keylime Mojitos, Strawberry Mojitos, and still my favorite The Classic Mojito.

Herbed Scalloped Potatoes {Savory & Sweet}
My most favorite bite of Scalloped Potatoes is the edge…same goes for meatloaf, brownies, cornbread, Oooo and prime rib (hint, hint…I love prime rib). So for this recipe, in an effort to get all the edges we can, we’re going to make these in a muffin tin instead of a casserole dish. If you like the cheesy soft center best, butter up a 2 Qt. casserole and get happy…this recipe can be made either way by simply adjusting the cooking time.

My most favorite day of the year at the office is Halloween (closely followed by the day after Inventory…that’s a me thing). Not only do we have GREAT costumes, and AWE-Mazing Decorations & Special Effects, but we have FOOD that’s to die for….muahahaha…. Speaking of food that’s to die for, this crazy good 27 Ingredient Chili Con Carne recipe was born on the pages of a murder mystery. IF the term Layers of Flavor applied to any single recipe….this might just be the ONE….27 of them to be exact.

I love a fall harvest dinner made with a star ingredient like Brussels sprouts. Once the only vegetable on my won’t-eat-foods list, the Brussels sprout has soared to the top of my favorite-food list. In the fall-winter months we seriously have them multiple times per week. I was flipping through my new Cooking Light magazine and without even reading the recipe I bookmarked the page for Cavatappi with Browned Brussels Sprouts and Buttery Breadcrumbs.

Salmon & Baked Eggs {Breakfast for Dinner}
Recipe inspiration for this one is quite simple…leftover salmon. Slow-Roasted Salmon with Tarragon and Citrus to be exact. Salmon is one of our favorite things to have for dinner. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.
