27 Ingredient Chili Con Carne {Share the Love}
My most favorite day of the year at the office is Halloween (closely followed by the day after Inventory…that’s a me thing). Not only do we have GREAT costumes, and AWE-Mazing Decorations & Special Effects, but we have FOOD that’s to die for….muahahaha…. Speaking of food that’s to die for, this crazy good 27 Ingredient Chili Con Carne recipe was born on the pages of a murder mystery. IF the term Layers of Flavor applied to any single recipe….this might just be the ONE….27 of them to be exact.

Cavatappi with Browned Brussels Sprouts and Buttery Breadcrumbs
I love a fall harvest dinner made with a star ingredient like Brussels sprouts. Once the only vegetable on my won’t-eat-foods list, the Brussels sprout has soared to the top of my favorite-food list. In the fall-winter months we seriously have them multiple times per week. I was flipping through my new Cooking Light magazine and without even reading the recipe I bookmarked the page for Cavatappi with Browned Brussels Sprouts and Buttery Breadcrumbs.

Pumpkin Hummus {with Homemade Pita Chips}
Getting ready for a big office Halloween Party tomorrow. Not only do we go all out with our costumes and decorations, but we put on quite a festive themed spread. This Pumpkin Hummus recipe from Cooking Light offers a nice holiday-twist on the traditional Middle Eastern spread. Serve with Homemade Pita Chips and you’ve got a great holiday appetizer.

{Breakfast for Dinner} Series
The most popular question at 5:00 pm in my office is “What’s for Dinner?” Last week I overheard this response….”I’m so tired of deciding what’s for dinner….I’m just going to make them breakfast!” Who doesn’t love a nice homemade breakfast? I’ve gone back into my “What’s for Dinner” archives and dug out some of my favorite Breakfast & Egg recipes. I hope you enjoy this {Breakfast for Dinner} Series.

Salmon & Baked Eggs {Breakfast for Dinner}
Recipe inspiration for this one is quite simple…leftover salmon. Slow-Roasted Salmon with Tarragon and Citrus to be exact. Salmon is one of our favorite things to have for dinner. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.

Zucchini Carbonara & Scrambled Eggs {Breakfast for Dinner}
When the abundant ingredient is zucchini….I’m happy. It is one of my favorite summer vegetables for certain and one I turn to all year long. In an effort to find more low-carb recipe options I came across this Zucchini Carbonara recipe on the site Whole Lifestyle Nutrition. What a fantastic way to enjoy the rich flavors of carbonara without the added carbs from pasta.

Pork & Sweet Potato Hash with Poached Eggs {Breakfast for Dinner}
I love hash. Growing up in New England it wasn’t unusual for us to have Hash and Baked Beans with our eggs for breakfast (or dinner). I’m not really sure if that was common in all households or if it was just that Mom loved them both so much. This Pork & Sweet Potato Hash is a great way to use last night’s leftover pork.

Monte Cristo Sandwich {Breakfast for Dinner}
The Monte Cristo Sandwich is a perfect Breakfast for Dinner dish. In fact it could be considered a Dinner for Breakfast meal as well. There’s nothing to it when it comes to making these ‘feel good’ sandwiches.

Mexican Breakfast with Pulled Pork & Eggs {Breakfast for Dinner}
When we have leftover pork roast, recipe ideas begin swirling in my head. Should we make Pozole, or Pork & Sweet Potato Hash, or Mexican Breakfast with Pulled Pork & Eggs. This time it’s going to be Mexican Breakfast for dinner.

Caramelized Banana Nut French Toast {Breakfast for Dinner}
French Toast is one of my favorite breakfast foods. Start with slices of bread, any kind of bread….nutty, grainy, fruity, thick sliced, thin sliced, sweet or savory. In this instance we set up a White Bread with pine nuts in our bread machine the night before.
