Baked Eggs in Avocado {Breakfast for Dinner}
The first time I saw this Baked Eggs in Avocado dish on the Internet I was rather awe struck. It was genius to combine these two ingredients. What a wonderfully healthy breakfast option, packed with vitamins and protein, morning or night.

Sliced Twice Baked Potatoes {National Potato Day}
This is one of those ‘National Days’ I will embrace. The Potato. Last night, on the eve of National Potato Day, we had a little pre-celebration with good friends over homemade potato chips…topped with goat cheese, blue cheese crumbles, and crispy bacon. Why was that not my NPD (National Potato Day) Post? Because I think we might have a recipe that can compete with those amazing chips…Sliced Twice Baked Potatoes!

Homemade Soft Pretzels {with Cheesy Crab Dip}
Today we are honoring Breast Cancer Awareness Day at my office. Pink Power is in full swing. Last year, for this same occasion, I attempted Homemade Soft Pretzels for the first time and they were a hit. I think we have a new tradition in the making.

Chicken Enchiladas {with Red Sauce}
The recipe inspiration for this dish comes from a dear sweet friend. She delivered two pans of these delicious Chicken Enchiladas to my family at a time of need. They were such a welcomed meal that so warmed our souls at that moment (and have every time I’ve made them since). They are mild yet so full of flavor that they keep you coming back for more.

Homemade Enchiladas Sauce
Homemade Enchiladas Sauce is a complete game-changer. It’s well worth the 20 minutes it takes to prepare and is so much better than store bought.

Not only do we enjoy a mouth-watering chicken dinner each week, but we then turn bones into broth, and broth into amazing soups and stews. It was B who first discovered Chicken in Milk by Jamie Oliver. In an attempt to change it up each week (Ooo I like that…the “Chicken Change Up”) he began to read endless websites searching for new and interesting whole chicken recipes. There are a ton of them to try….but…

Baked Cod with Montpellier Butter
Cod is a wonderfully mild white flaky fish. It’s happy seasoned with anything from fresh herbs to punchy marinades. It’s beautiful baked or grilled and when leftover it begs to be the star in a batch of fish chowder. After recently learning about freezing fresh herbs in butter or olive oil, I began to do a little compound butter research and decided Montpellier Butter would be the perfect pairing with our baked cod.

Fresh Herbs {Growing, Harvesting, Using, Storing, Freezing, and Drying}
Over the years I’ve spent a good portion of my free time getting to know and understand Fresh Herbs. I’ve certainly come a long way….only to discover the journey has really just begun. I’ve decided to go ahead and share this post now, knowing it will be a post in-progress that I hope to add to as I make new discoveries.

Pesto Pizzas on Naan Flatbread {Two Ways}
We celebrated National Pizza Month at work today. More correctly stated, we down right worshiped this fabulous food group. We had 10 homemade varieties of pizzas and calzones, all uniquely different…..all delicious.
