    I wanted to share one more Winter Thyme Spice Exploration dish before I mentally checked into Spring.  When I discovered Kefta Mkaouara, a traditional Moroccan tagine dish, it offered all the right components.  Lovely spices, fresh herbs, wonderfully seasoned mini-meatballs, and poached eggs all slow cooked in glorious tomato and olive sauce in our new Tagine.  Beautiful.

    Kale with Sausage, White Beans & Butternut Squash By now, most everyone is aware that kale comes packed with a bushel of health benefits, even if you’re not quite sure what they are specifically.  This would be the time to share that I wanted to be sure I knew before moving on.  So I googled ‘health ben’ and before completing the word ‘benefits’…never mind adding the word ‘kale’…I had 2,150,000 results for Health Benefits of Kale.  Here’s a link to a quick Top 10 List that is well worth reading.  I had no idea.

    As kids growing up, when we went out to a restaurant, what we ordered was routine (thank goodness I outgrew that phase).  Even though Mom had it memorized and could have easily ordered for us, from as early as I can remember she insisted we order our own meal (and take our elbows off the table).  The server would take our drink order first, mine was always Ginger Ale.  Then they’d come back and take our meal order, mine was always a Grilled Cheese Sandwich and a cup of Clam Chowder.  Always.  When you grow up in New England, it’s not a matter of whether Clam Chowder is the ‘soup of the day’….it will always be on the menu.

    While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs.  I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst.  This mixture took the place of the traditional tomato-chili sauce and refried beans.  You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.
