    Thai Pumpkin Soup. There was a time a few months a go that I heard there might be a shortage of canned pumpkin.  Wait.  A shortage of canned pumpkin?  Seemed ridiculous.  So I only bought 10 cans.  Now I’m approaching the “Simplify” month(s) when I long to strip my pantry down to only the most essential ingredients.  Some people cleanse, I purge the pantry.     Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make.  Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil.  Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper.  Seal the foil making a packet.

    Tzatziki Sauce. This traditional Greek cucumber yogurt sauce is a key ingredient in a Lamb Gyro and Greek Chicken Meatballs.  It also makes a wonderful dip to pair with a fresh veggie platter.  Served chilled, it’s so nice and light, yet full of flavor.  The fresh mint, garlic, and lemon juice play oh so nicely together.  I could go on.  Instead I think you should make some…you’ll love it.
