Going Green Smoothie {a Trial Run}
Here’s to a fresh and healthy start to the New Year. I’ve only had my new Vitamix blender for a few days now but I’m certain I’m going to love it. I’ve made Orange Vanilla Vinaigrette and Thai Pumpkin Soup using recipes from the Vitamix cookbook. Both were delicious. This morning I made this Going Green Smoothie without a recipe. We’ll call it a trial run.

Spinach Phyllo Triangles. Glorious buttery crispy pockets of cheesy spinachy love. This was the first dish I learned to make using phyllo dough. There was some trial and error as I recall, but now this dish is quite routine for me. While it does take a little more time to prepare than some appetizers, it is well worth it. And your guests will love them too.

Thai Pumpkin Soup. There was a time a few months a go that I heard there might be a shortage of canned pumpkin. Wait. A shortage of canned pumpkin? Seemed ridiculous. So I only bought 10 cans. Now I’m approaching the “Simplify” month(s) when I long to strip my pantry down to only the most essential ingredients. Some people cleanse, I purge the pantry. I have a few more cans of pumpkin to incorporate into dishes.

Cheesy Mashed Potatoes are a favorite Thanksgiving and Christmas side dish. Creamy mashed potatoes get a little flavor love with the addition of sour cream and cream cheese. Then they are baked casserole style with a topping of shredded cheddar cheese. One word. Yummy.

Loaded Butternut Squash Chips. Think loaded potato skins, but better. At least that’s how we felt about them. The hint of sweetness from the butternut squash was soooo good with the savory toppings. These made a fantastic and fun appetizer.

Baked Breakfast Potato {with Scrambled Eggs, Avocado, Tomato & Queso Fresco. Take all your favorite fresh Mexican flavors and layer them onto a Perfectly Baked Potato. Scoop out the roasted potato flesh and season it with a little butter, a dash of cumin, chili powder and salt and return it to the jacket. Now top with a scrambled egg, diced fresh tomato, sliced avocado, queso fresco crumbling cheese and fresh cilantro leaves.
