The pictures don’t do this recipe justice, but I am here to tell you that Italian Sausage & Polenta Lasagna is pure comfort. Surprisingly, that comfort is delivered without a guilt trip. That’s right, this recipe came straight out of the new Weight Watchers cook book AND it’s made in the slow cooker. Badda bing. Badda boom.

Thai Basil Egg White Omelet Bowl
Most days, whether at home or the office I’ll have an Egg White Omelet Bowl for breakfast. A bed of spinach (getting my calcium anywhere I can), a drizzle of olive oil, a sprinkle of fresh herbs and scallions, and an egg white omelet packed with herbs. Today, my herb of choice was Thai Basil which is thriving in our Aero Garden presently. This Thai Basil Egg White Omelet Bowl fits in so nicely with my Healthy Choices plan.

Healthy Southwest Burrito Bowl. I went to Pet Smart during lunch to replenish Lilah’s food. Pet Smart is very close to Pier One. I was smack in the middle of Healthy Lunch Bowl Week. They sell really pretty bowls.

We brought 7-Layer Hot Italian Dip along with a bottle of red and white Italian wines to a happy-hour party recently. We stepped outside the comfort zone on the wines, perhaps this is a chance to discover a new favorite.

Restaurant-Style Salsa
Why have I waited so long to discover how easy AND inexpensive it is to make Restaurant-Style Salsa at home, by simply using your blender?! We love Fresh Tomato Salsa in the summer when the tomatoes are abundant and delicious. But frankly, I’m not willing to pay for over-priced, not all that tasty, supermarket tomatoes during the winter months. Instead we turn to our freezer where we’ve got Homemade Tomato Sauce and to our pantry where we always have canned tomatoes on hand.

Sausage & Thyme Cassoulet
I made a really good Sausage & Thyme Cassoulet. I filled it with spicy Italian turkey sausage, carrots, sweet potato, kale, onion, tomatoes, garlic, and lots of fresh thyme. A nice slow cook turned all those flavors into the heartiest of healthy meals.

I found this yummy Sausage & Fennel Stuffed Pork Roast recipe in my December Food & Wine magazine. I’ve become a big fan of fennel, especially when combined with fresh herbs and savory aromatics. It was the stuffing that hooked me on this recipe from the start and the end result was absolutely delicious.

Chickpea & Spinach Stew
The holidays have a way of throwing us me off course. No matter how hard I try, temptation is waiting at every turn. This year is going to be different. Yes, I will cave to some temptations, or better said…enjoy my favorite dishes in moderation. Yet, what I won’t do is completely abandon my Healthy Choices plan only to start over on January 1st. Nope, not gonna do it. This Chickpea & Spinach Stew, adapted from Weight Watchers, is going to keep me on track.
