    Welcome Winter Thyme {A Spice Exploration}

    Lemony Thyme was born out of my new found love of cooking (and eating) when I discovered how fresh herbs could bring a dish to life.  We bought three whiskey barrels for the back porch and filled them full of young herb plants.  Spring Thyme looked something like this when we first began. Then as the summer sun showered our young plants with love, they began to flourish.   Every recipe was an opportunity to harvest these glorious herbs.  Just as fresh as the produce of the season, our dishes were bright with fresh herb flavors.  Summer Thyme was a happy thyme for certain.

    While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs.  I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst.  This mixture took the place of the traditional tomato-chili sauce and refried beans.  You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.

    Scrolling through my Lemony Thyme News Feed yesterday I discovered this recipe posted by Feastie (on behalf of Two Peas and Their Pod).  My first thought was YES, I do have apples and cranberries in my fridge, purchased with good intentions, yet still patiently waiting for their time to shine.  My second thought was THIS is exactly the recipe that my brand new adorable mini covered baking dishes are longing for.  My third (and final thought) was….oh my, forget the first two thoughts…this Apple Cranberry Crisp sounds awe-mazing and I’m making it.

    Our new love of North African flavors has led us to discover a unique blend of spices and ingredients.  This Spicy Green Sauce from City Kitchen,called chermoula offers just that.  A slightly spicy pesto-like sauce that infuses the heat of serrano peppers, with the very bright and green flavors of lots of fresh cilantro and scallions, and finishes with a hint of tart lemon zest.  We paired this sauce initially with our North African Chicken, but are certain it would be delicious with fish, beef, or lamb.
