Red Velvet Hot Chocolate with Cream Cheese Whipped CreamValentine’s Day is quickly approaching and romance is in the air.  This will be our first Valentine’s Day together.  I want it to be special.  Sweet.  Luscious.  Filled with love.  So I’ve made you this Red Velvet Hot Chocolate with Cream Cheese Whipped Cream.  May you start your special day with a cup of sweet chocolate love.  xo

~ Red Velvet Hot Chocolate with Cream Cheese Whipped Cream ~

Serves Two

For the Cream Cheese Whipped Cream

1 cup whipping cream

3 Tbl. confectioners sugar

3 Tbl. cream cheese, room temp. (5-10 seconds in the microwave works wonders)

Beat above ingredients until peaks form, refrigerate.

For the Red Velvet Hot Chocolate

3 cups milk

1/2 cup chocolate chips

1/2 tsp. red gel food coloring

In a small sauce pan, combine above ingredients and simmer gently.  Whisk occasionally until chocolate has melted and is fully incorporated into the milk.

Serve in mugs topped with Cream Cheese Whipped Cream and Chocolate Heart.

For the Chocolate Hearts and XO Hugs & Kisses

1/2 cup chocolate chips

Microwave chocolate chips in 30 second intervals, stirring in between, until just melted.  Stir quickly until smooth.  Spoon melted chocolate into a small squeeze bottle.  I found these little ones worked great.  Lay a piece of parchment paper onto a small baking sheet.  Squeeze melted chocolate into desired shapes.  Quick chill in the freezer for 5 minutes until set.  Slide shapes off parchment paper and perch atop your token of love.  xo
