I hope you’ve been enjoying my mini-series on Lunch Bowls. I’m a bit obsessed with portion controlled meals. Mostly though, I’m quite fond of a theme.
It helps my brain get organized.
We recently celebrated National Crabmeat Day. When Bowl Week meets Crabmeat a California Roll Lunch Bowl is born. Continue reading »

This salad. This Fattoush Salad is flavor love.
I was working hard to use ingredients already on hand. I may be a bit out of control. Pantry and freezer doors are…busting. So I went on offense and typed pita, lettuce, mint, tomato into my search engine field.
Kabam!!! Pow!! Fattoush! Continue reading »

We celebrated Shelby’s birthday last evening. When we asked her what she’d like for dinner she said “one of your amazing Ribeye steaks.” To which we gladly obliged. I wanted to come up with a fun and light appetizer to start us off. I remembered a time when Shelby and I met for lunch at a Mexican restaurant in town. As soon as we sat down she said “you’ve got to try their Ceviche.” I had no idea she shared my love for this chilled seafood salad. Continue reading »

It’s crazy to admit that this is the first time I have made a Greek Salad. I’ve loved every one I’ve ever enjoyed at a restaurant. For me it’s the combination of fresh ingredients with big bold flavor personalities, that somehow get along really well. No competitiveness here. I like it!! Continue reading »

This traditional Greek cucumber yogurt sauce is a key ingredient in a Lamb Gyro. It also makes a wonderful dip to pair with a fresh veggie platter. Served chilled, it’s so nice and light, yet full of flavor. The fresh mint, garlic, and lemon juice play oh so nicely together. I could go on. Instead I think you should make some…you’ll love it. The Bloody Mary has come a long way baby from tomato juice & vodka. The myriad of spices and seasonings and sauces that can transform this drink is endless. If I only owned a juicer….just think how cool and colorful Mary could become (hint hint). Today we’ll stick with our every day humble blender and create a fresh crisp Green Bloody Mary. Had a great day with my kid! Visited our local “every 3rd weekend antique market” just becuz…. I truly believe Grammy gave us the gift of gab…we couldn’t walk by a booth without engaging the vendor. My kid scored a cast iron tea pot and bartered for a leather vintage bag (90 minute massage = $90 leather bag)!
While we were so very close to ordering funnel cakes from the food window….we pulled back. “Let’s make a healthy lunch.” Gazpacho won hands down and we made it in a blender with zero cooking. Continue reading »
