Braciola {Italian Beef Rolls}
Braciole {Italian Beef Rolls} slowly simmered in spicy Arrabbiata sauce until the beef is fork tender. The filling, comprised of parmesan cheese, fresh parsley, Italian bread crumbs, garlic, toasted pine nuts, and hard-boiled egg, is my loose interpretation of this classic Italian dish.

Thai Basil Egg White Omelet Bowl
Most days, whether at home or the office I’ll have an Egg White Omelet Bowl for breakfast. A bed of spinach (getting my calcium anywhere I can), a drizzle of olive oil, a sprinkle of fresh herbs and scallions, and an egg white omelet packed with herbs. Today, my herb of choice was Thai Basil which is thriving in our Aero Garden presently. This Thai Basil Egg White Omelet Bowl fits in so nicely with my Healthy Choices plan.

Gruyere Cabbage {with Bacon}
We bought a 5 pound cabbage for 88 cents. Not sure why I chose that as the intro line to this recipe, but dang cabbage is cheap. Which makes really good cabbage recipes all the more appealing. We like many, had Corned Beef & Cabbage for St. Patrick’s Day. We like many, have leftovers to repurpose. Gruyere Cabbage was a dish my mom made often. Today, I dug out the 30-year old hand written recipe card, made sense of the measurements, and added bacon. Oh my! I think Mom would be proud.

Spicy Shrimp Thai Buddha Bowl
I don’t think I’ve told you about my 2015 Challenge. My Healthy Choices walking buddy Bethany and I signed up to walk a combined two thousand fifteen miles in 2015. That’s five point five miles per day together or two point seven five miles each. every day. for 365 days. All that walking during our lunch hour, makes these girls hungry. I’m proposing Spicy Shrimp Thai Buddha Bowls all around.
