I have however successfully made a couple variations of pickles. These Refrigerator Pickled Green Beans are ready in two days. They are crisp with a slightly spicy zing. Delicious.

Chicken Enchiladas Soup
This week’s whole roasted chicken got bathed in rich Homemade Enchilada Sauce. Think BBQ Chicken, only basted with that wonderful chili and tomato based sauce. When it came out of the oven it was a sight to behold. We first enjoyed our chicken dinner which later became Chicken Enchiladas Soup.

Homemade Cream of Chicken Soup
It was high time for a Homemade Cream of Chicken Soup recipe on Lemony Thyme. With our weekly roast chickens we produce (and freeze) a lot of Homemade Chicken Broth. We then use it in everything from soups to casseroles to simmering sauces.
