Cheesy Jalapeno Grits Casserole | LemonyThyme.com | #comfortfood #breakfast #brunch #sidedish

I’m off this week.  Off from work.  My day job is running a door lock and hardware company.  Strike that.  My day job is motivating and hopefully at times inspiring my work family.  Ultimately we all want the same, from work.  It’s where we make our living, which funds our passions.

This recipe has nothing to do with that.  But I wanted to share where I am right now. Continue reading »

Comfort.

When you read the word comfort what comes to mind? Perhaps you are at a place in your life where comfort is most often used as a verb, whether providing or receiving it.  Since you’re reading this on my food blog, perhaps comfort food is the first thing you think of.

Salisbury Steak with Mushroom Gravy

When I wrote this post about Salisbury Steak I wanted to prepare and share a dish that said “when I am with you I am complete and comfortable”. Continue reading »

Easy Pad Thai with Spaghetti Squash | LemonyThyme.com

Pad Thai is my go-to Thai take-out dish.  I love everything about it.  Traditionally this is a noodle dish and who doesn’t love noodles, especially when they are stir-fried with eggs!  Yum!!  Today I decided to lighten it up a bit, so I substituted roasted spaghetti squash “noodles” for the classic rice noodles.  Results.  Two thumbs up in this house. Autumn Thyme Wedge Salad | LemonyThyme.com

I made this Autumn Thyme Wedge Salad a couple weeks ago and have been dying to share it with you.  It has so many wonderful seasonal flavors that it sings of Autumn Thyme.  The star of the salad were the Warm Goat Cheese Fritters.  They were so good they deserved their own recipe post (and so delayed the introduction of our newest wedge salad recipe). Fattoush Salad | LemonyThyme.com

This salad.  This Fattoush Salad is flavor love.

I was working hard to use ingredients already on hand.  I may be a bit out of control.  Pantry and freezer doors are…busting.  So I went on offense and typed pita, lettuce, mint, tomato into my search engine field.

Kabam!!! Pow!! Fattoush! Continue reading »

French Dip Sandwich

It’s National Sandwich Day.  Definitely couldn’t let this one get by without a proper tribute.  But I had a slight dilemma.  I am currently on grocery store restrictions aka it’s Eat Out of the Fridge/Pantry Week for us.  I have promised not to step foot into a store.  It’s killing me y’all.  Continue reading »

Classic Lasagna | LemonyThyme.com

Today was our Halloween Luncheon at the office.  It is an annual tradition.  We decorate, dress in costumes, and feast.  I decided to make a giant Classic Lasagna to share with my work family.  But I wanted to add a spooky element to the dish.  Wait til you see what I did. Continue reading »
