We were looking for an easy weeknight meal that could be made from ingredients already on hand. We like to keep boneless skinless chicken breasts in our freezer. We buy them in bulk, trim them of any fat, then lightly pound them to an even thickness before freezing them flat in bags of two. When we’re ready to use them we just thaw and create our meal.

Blueberry Goat Cheese Crostini {with Honey & Lemon}
There something really wholesome about a beautiful bowl of fresh spinach and mixed greens sprinkled with the fruit of summer. That’s exactly how I’ve been enjoying my salads lately…with assorted berries, nuts & cheeses. Last week when I got to the end of several of my salad ingredients I was left with spinach, blueberries, and a bit of goat cheese. I drizzled that with balsamic vinaigrette and discovered my favorite salad of the summer.

This week’s version of our whole roasted chicken was inspired by the most beautiful mushrooms and our gloriously happy sage plants. My first thought was to make a stuffing with crusty bread, fresh mushrooms, apples, sausage and sage. Then fill the cavity of this beautiful bird and let my taste buds dream of what was to come.

I had a moment yesterday. A really big moment. I was on my way to work via McDonald’s drive-thru when my phone rang. The voice on the other end said “Lib, I’ve got to do something.” I pulled my car into a parking lot and sat and listened. She proceeded to share a conversation she had with her 7 year-old daughter that morning…a conversation that brought us both to tears.

I realize this recipe is not for everyone. Someone in my house was a bit skeptical himself. Having said that, if you’ll follow this picture montage to the end, you’ll see what a whole roasted tandoori cauliflower looks like, only 17 minutes after it comes out of the oven. And I didn’t work alone.

We’ve lightly adapted it to use boneless chicken breasts, turkey sausages, and we include potatoes to round out the dish.
