    Herbed Mashed Potatoes

    April 7, 2013 / 1 Comment

Tips on Making Great Mashed Potatoes The type of potato is a matter of personal preference, we often make mashed out of bakers, all types work. Plan on a 1/2 lb. per person. Peel them or not, depends on whether you want a rustic or smooth finish. Cut them or not, the key is they need to be similar in size for consistent cooking time. If you peel them, cover them in cold water right away.  Then drain them right before cooking and add fresh water (this gets rid of excess starch). Boil them gently until just fork tender (stick a fork in one, you should be able to lift it out…

    Brining Basics

    April 6, 2013 / 1 Comment

If you’re planning on throwing chicken or pork chops on the grill this weekend, consider giving them a flavor and moisture boost.  Brining is an age old way of convincing your meat that it wants to hang on to it’s moisture. To Make a Basic Brine ~ Use a 1/2 cup of kosher salt for every quart of water (if you’re using table salt, reduce by half).  You want only enough brine to cover the meat, so choose a plastic or glass container just large enough to hold your meat which reduces the amount of brine required.  Bring the water, salt, and any additional flavor infusion (see below) to a boil, then…

    Spaghetti & Turkey Meatballs

    April 4, 2013 / 5 Comments

Sometimes I crave Spaghetti & Meatballs.  I’m not really a big ‘craver’…if that is a word, except Chocolate cravings….those happen most days at either 3 pm or and 9 pm. It’s Day #2 of Eat Out of the Fridge/Pantry Week.  As I walked out the door it occurred to me – should I thaw Chicken or Ground Turkey?  Turkey it was and meatballs it became.

Rosemary, Parmesan & Paprika Oil Roasted Potatoes

    April 2, 2013 / 3 Comments

I received a text message yesterday…four magic words “I’ve got dinner covered.”  Maple-Brined Grilled Pork Chops, spinach salad, and a baked potato to share.  All from Fridge/Pantry ingredients.  I was so inspired that I took our one baking potato and showed it some love.  Rosemary, Parmesan & Paprika Oil Roasted Potatoes. We’re in the middle of another Eat Out of the Fridge/Pantry Week at our house.  If this is the first time you’ve heard me use that phrase, here is a simple explanation of how we arrived at this point.  Back to back weeks of recipe creating, holiday cooking, and reckless abandon for anything that resembled sensible eating.  When you open the refrigerator and you can’t tell…

    Maple Horseradish Glazed Baked Salmon

    March 27, 2013 / 7 Comments

Maple Horseradish Glazed Salmon. Discovering the incredible flavor pairing of maple and horseradish changed my culinary world….or has at least inspired several really delicious dishes.  We have used this Maple Horseradish Glaze recipe on roasted beets, baby carrots, salmon suckers, and now glazed salmon fillets.  Frankly, it’s so scrumptious I would even enjoy it over vanilla ice cream.

About Libby

Hi, I'm Libby and welcome to Lemony Thyme. I hope you'll enjoy this collection of recipes, eating experiences, and food photography. My cooking abilities rose to a new level when I started incorporating fresh herbs. I began to understand the term ‘layers of flavor’ and found myself deconstructing dishes with my tongue to identify each ingredient.
