I held back from calling these Philly Cheesesteaks.  I’ve never actually had an authentic Philly Cheesesteak but am sure they are worthy of more effort than it took to make these subs.  These were super fast and so easy.     Roasted Tomato & Mozzarella. I have seen some wonderful recipes lately for slow roasting tomatoes, like this one by The Foodie Physician.  By cooking them low and slow you get a rich tomato flavor.  They then can be used in dishes as you would sundried tomatoes.  Delicious.

    The trout was so fresh and beautiful at the seafood counter today that I couldn’t resist, even without a plan for how to prepare it.  Pan sautéed trout is what first came to mind.  I have a weakness for this wonderfully mild fish, especially when it’s sautéed in butter.  To kick it up I decided on Pecan-Crusted Trout, which fit right in with our low-carb eating.
