Take all your favorite fresh Mexican flavors and layer them onto a Perfectly Baked Potato.  Scoop out the roasted potato flesh and season it with a little butter, a dash of cumin, chili powder and salt and return it to the jacket.  Now top with a scrambled egg, diced fresh tomato, sliced avocado, queso fresco crumbling cheese and fresh cilantro leaves.

    Nutella Truffles.  I didn’t have to think twice when I read this for the first time.  Point me towards the Nutella isle. Nutella.  A phenomenon of sorts with mass appeal.  Moms love it because it makes breakfast more fun for their kidlets.  Dads love it straight from a spoon.  Bloggers love to celebrate National World Nutella Day and throw no caution to the wind as they exploit this ingredient.  Have you seen 3-ingredient Nutella brownies, mug cakes, pancakes?  It’s crazy!  In a good way.  Here are 8 Things You May Not Know About Nutella.  I’m all in.  Throw Nutella my way and I think we can all get happy!!

    I have a well known weakness for Peppermint Bark.  Completely…I do.  It’s pure magic to me.  I’ve stalked many a Williams-Sonoma store on free sample days.  I’m the one trying to look uninterested as I saunter by the counter….multiple times.  Hmm, what’s this?  Peppermint Bark.  Okay, if you insist.  Don’t mind if I do.  This one is for my daughter.  Okay I’m leaving now. When Hershey’s came out with their Candy Cane Kisses they brought the essence of peppermint bark to our grocery store shelves.  I embraced that.  Santa Kisses Cookies in the spirit of Peppermint Bark magic.

    Our Slow Braised Beef & Barley Soup began by slow roasting some short ribs that were taking up space in the freezer.  Yes, I have once again vowed to stay out of the grocery store for at least a week. You could easily use leftover steak or roast beef or stew beef and achieve the same tender beefy goodness.  The trick is to not be in a hurry.  We brown our beef in a little oil before adding braising liquid to the soup pot, in this case we used beef broth.  Throw in a bay leaf, thyme sprig, and fresh cracked pepper and let her go low and slow until the meat…
