    Brining Basics

    April 6, 2013 / 1 Comment

    If you’re planning on throwing chicken or pork chops on the grill this weekend, consider giving them a flavor and moisture boost.  Brining is an age old way of convincing your meat that it wants to hang on to it’s moisture. To Make a Basic Brine ~ Use a 1/2 cup of kosher salt for every quart of water (if you’re using table salt, reduce by half).  You want only enough brine to cover the meat, so choose a plastic or glass container just large enough to hold your meat which reduces the amount of brine required.  Bring the water, salt, and any additional flavor infusion (see below) to a boil, then…

    Welcome Autumn Thyme {Dried Herbs}

    September 30, 2012 / 11 Comments

    Today we say goodbye to Summer Thyme and welcome Autumn to the pages of Lemony Thyme.  Our new homepage picture tells the story of our fresh herb journey.  This Spring we made three whiskey barrel herb gardens for our back porch.  They became the inspiration for Lemony Thyme as our cooking began to burst with flavor.  We’ve nurtured them and they’ve nourished us all Summer long.  While we still have a good bit of life in our herb barrels…we’re but a frost away from losing them until next Spring.

    Herbed Butter & Oils {Fresh Herbs Frozen in Olive Oil or Butter}

    September 10, 2012 / 12 Comments

    Now you can have fresh herb flavors in the Winter Thyme too!!  Freezing the herbs in olive oil or unsalted melted butter allows the herbs to keep their color and aroma.  Just pop them out of the freezer to start any sauté or savory dish.  Just brilliant!

    Must Haves {Fridge & Pantry}

    August 28, 2012 / No Comments

    She had a comprehensive list of at least 10 specific ingredients she couldn’t live without, with the reasoning behind each one.  She suggested that I add a section on our ‘about us’ page that talks about “Must Haves” (in our pantry and fridge).  Okay, I can do this.  And then nothing happened.  How could I possibly narrow it down.  It’s kind of like the question ‘if stranded on a deserted island…’  It’s not as easy as it seems.  I believe this is a product of getting older.  Her 21 year old mind is pure, it knows what it needs right this very moment to make her happy.  Someone poses a ‘life’ question to me….my…

    Homemade Chicken Broth

    August 11, 2012 / 8 Comments

    Yesterday’s whole chicken brings us to ~ Step 2, heavenly Homemade Chicken Broth.  Once I began to save veggie scraps and chicken carcasses on a regular basis, I knew homemade chicken stock was in our future. There are several methods to choose from when making chicken broth. A good old heavy pot with snug fitting lid works well, as does your crockpot or instant pot.

About Libby

Hi, I'm Libby and welcome to Lemony Thyme. I hope you'll enjoy this collection of recipes, eating experiences, and food photography. My cooking abilities rose to a new level when I started incorporating fresh herbs. I began to understand the term ‘layers of flavor’ and found myself deconstructing dishes with my tongue to identify each ingredient.
