Every day on my drive to work I’m amazed at how it has transformed the space the Farmers’ Market occupied all summer long. Each morning at the office I can overhear recaps from those who attended ‘the fair’ the evening prior.

The Country Fair has come to town. Just a few blocks from my office, where my Farmers’ Market used to sit, is now a whirling twirling full blown fair. No shortage of rides & attractions, tractors & steam engines, pigs & chickens, rodeo riders & alligator wrestlers, and a myriad of Fabulous Fair Food vendors.

Cuban Tilapia {Third Coast Inspired}
Way back when, when I was much younger, I would frequent a neighborhood hole-in-the-wall kind of place every Friday night (there really were holes in the wall, each with a detailed story). This place was special. It had extreme character and characters, beautifully colorful people and hand-painted murals of them, free flowing spirits and free spirited bar tenders, bathroom walls that told stories through their ‘underwater’ paintings, Calypso music throughout and a patio with thatched umbrella tables overlooking…..the parking lot. Mushroom Bacon Swiss Burgers
Is there anything better than a good burger? Okay yes… there are some things, but on the rare occasion that we actually make beef burgers (vs. turkey or salmon) they are such a huge treat. Whether you lay them on a bed of greens or perched on a toasted onion roll they are amazing. Top them with a slice of nutty pungent Swiss cheese, sautéed mushrooms, and a couple of strips of crispy bacon…. Mushroom Bacon Swiss Burgers = WINNING!!
