I truly find it therapeutic to scan through shelves of books and dishes and well dishes mostly. I’ve experienced the same thrill I felt today on several occasions but it’s been quite a dry spell for me. Today, however…..SCORE.

I know some people dread grocery shopping, but for me…..I’m just a kid in a candy shop. And out of necessity early Sunday morning, I discovered that to be the very best time to shop. There were parking spaces and shopping carts, wide open isles and fully stocked shelves, and oh the bakery. Everything was still warm…doesn’t that say it all.

This beautiful bright Sunday morning began just a wee bit earlier than we had planned, following a wonderful late evening birthday celebration with family (a now monthly “tradition” for us). Yesterday’s whole chicken brings us to ~ Step 2, heavenly Homemade Chicken Broth. Once I began to save veggie scraps and chicken carcasses on a regular basis, I knew homemade chicken stock was in our future. There are several methods to choose from when making chicken broth. A good old heavy pot with snug fitting lid works well, as does your crockpot or instant pot.

Oregano Lemon Garlic Roast Chicken. One night every week we cook a whole chicken for dinner. Sometimes we work hard to create interesting and different flavors by changing up the fresh herbs or marinade or even cooking style. Sometimes we just sprinkle her with salt & pepper and roast her until she’s done…on these days it’s not uncommon that we also stand at the counter hand picking our way through dinner.

Fresh Veggie Pancakes with Tomato Salad. Today is the day I must use up the remains of this weekend’s produce run. I am guilty of over buying (yes dear I am admitting it) and also of over eating (claiming that one too…..boy feels good to get that out). However, I also think I’m pretty darn good at whipping up a dish from what’s left in the fridge that needs to be eaten by tomorrow.

Vietnamese Pork Tenderloin
Fish Sauce. No wait…don’t run away. I will admit that fish sauce is a little scary, at first. However it is the star ingredient in this dish and when combined with the many other powerful flavors it just gets happy. I found this wonderful Vietnamese Pork Tenderloin recipe in my July Cooking Light magazine. It’s well worth the 30 minutes or so of prep and all 25 ingredients.
