College Football Season is upon us. In fact, for our team it’s GAME DAY!! Since we’re a foodie family, Game Day is one more reason to create new dishes. Our inspiration comes from our opponents. Yes, we like to envision our rivals as a meal. For example if we’re playing the Arkansas Razorbacks….we might have a meal of Braised Pork. I’ve been warned that talking College Football is akin to discussing religion and politics. So instead we’ll focus on these Southwest Skillet Corn Fritters {with Avocado Ranch Dip}. We devoured them.

When I first began the Lemony Thyme blog it was our fresh herb porch pots that I recognized/acknowledged/gave credit to/sited/attributed for my cooking inspiration. Fresh Herbs still continue to amaze and inspire me daily. However, I have found an equally intriguing element to cooking. Recreating fridge/pantry staples from scratch (or mostly from scratch). Homemade Buttermilk Ranch Dressing is super easy to make at home and just as good if not better than the bottled variety.

Peach Buttermilk Cobbler {with Vanilla Ice Cream}. I discovered several months ago and quite by accident that some people prefer cobbler over cake. It just so happened on that day I had a quart of fresh blackberries. And so I made, and we mutually enjoyed, Blackberry Buttermilk Cobbler. On this day, I happen to have 10 peaches fresh from the Farmers Market. I’ll start by making Peach Buttermilk Cobbler.

Bacon & Sage Soda Bread
Bacon & Sage Soda Bread. I first tackled making Irish Soda Bread on St. Patrick’s Day. Much easier than I had expected, made from ingredients we typically have on hand. AND can be ready in 35-40 minutes, which is nice. Especially when the Classic Beef Stew you’re making is almost finished and you realize you have no crusty bread, which is practically an ingredient on it’s own.
