It’s soup weather in our neck of the woods AND the NFL Playoffs are under way. So when pondering What’s for Dinner, I came up with the combination of Buffalo Wings & Chicken Soup. Do you ever envision a recipe and think to yourself brilliant!, this is the most brilliant creation anyone has ever imagined. I will make it and they will name it after me. Garlic Parmesan Roasted Chickpeas {Healthy Living}
Healthy Living is something we should all aspire to. I’m not crazy about the word diet, unless a doctor puts you on one. For me, and many I talk with daily, we just need to bite the bullet and eat right and exercise…aka a little Healthy Living. I’m about to enter airport world, lethal for Healthy Living (just behind Amusement Parks and County Fairs). Seriously, someone please start an airport restaurant franchise featuring healthy living options, that are quick and portable. I’m taking these Garlic Parmesan Roasted Chickpeas with me…baby steps.

Roasted Vegetables {Cauliflower & Brussels Sprouts the unsung heroes}
This past winter we began roasting almost all our veggies. We started out with potatoes and onions tossed in olive oil. Then we added zucchini, which led to cherry tomatoes and eventually we got brave enough to add Brussels sprouts, a formerly avoided at all cost vegetable. Had no idea these could be so amazing…. we actually ate Brussels 2-3 times a week for months.

Smoked Turkey & Brie Grilled Cheese with Apples & Spinach {and Apple Butter}
Recipe inspiration…hmmm toss up between one of those amazing Artisan Grilled Cheese Sandwiches (which almost implies healthy…hehe) and an unused hunk of Brie in the cheese drawer. Peruvian Chicken. When my co-worker Cindy told me she had a recipe that was right up my alley…I listened. She knows me. The Wedge Salad {and Grinching Away Christmas}
Today’s the day. The day I dread each January. Taking down the Christmas decorations, or as we call it….Grinching Away Christmas. Every year I procrastinate. Drag it out until the very last minute. The house just doesn’t feel the same without them. The lights of the tree warm the room and my soul. I hear trips being made to the basement….this is really going to happen today. Ugh! Can we just have a Wedge Salad instead.

Ham Bone Soup {Warm & Tasty}
This wonderful soup, that we’ve been eating for the past two days, could be made with almost any ingredients….so long as there’s a Ham Bone in the soup pot. And no matter how skilled you are at carving a ham, there is always extra meat still on the bone.

Red Currant Chili Glazed Salmon {with Israeli Couscous with Spinach}
Look at these for just a moment. They are red currants and tonight they are recipe inspiration. When we were growing up, one of mom’s signature party appetizers was Cocktail Franks in Red Currant Chili Sauce. We loved them. I hadn’t thought about them in quite some time until I spotted these little beauties at the market. There was no way I was leaving without them. And so we shall have Red Currant Chili Glazed Salmon over Israeli Couscous with Spinach.
