Buffalo Wing Chicken Soup {with Orzo}
It’s soup weather in our neck of the woods AND the NFL Playoffs are under way. So when pondering What’s for Dinner, I came up with the combination of Buffalo Wings & Chicken Soup. Do you ever envision a recipe and think to yourself brilliant!, this is the most brilliant creation anyone has ever imagined. I will make it and they will name it after me. But just to be safe, let’s do a quick google search just to be sure someone else hadn’t already thought of it. For a fleeting moment this Buffalo Wing Chicken Soup was my chance for fame. Sadly, it’s not my time….let’s just say it’s been done…

Braised Rib End Pork Roast
I was invited to be a Sunday Dinner guest in my own home. Doesn’t get much better than that. So while I’m writing about this dinner, this Braised Rib End Pork Roast was a combined effort and oh so delicious.

Smoked Turkey & Brie Grilled Cheese with Apples & Spinach {and Apple Butter}
Recipe inspiration…hmmm toss up between one of those amazing Artisan Grilled Cheese Sandwiches (which almost implies healthy…hehe) and an unused hunk of Brie in the cheese drawer. Doesn’t really matter which because it was the Apple Butter that stole the show. Smoked Turkey & Brie Grilled Cheese with Apples & Spinach {and Apple Butter}.

Peruvian Roast Chicken {She Knows Me}
Peruvian Chicken. When my co-worker Cindy told me she had a recipe that was right up my alley…I listened. She knows me. Peruvian Chicken she promised was packed full of incredible make-you-get-a-little-giddy flavor…and wouldn’t you know this recipe is just in time for Winter Thyme Spice Exploration. She really knows me.

Red Currant Chili Glazed Salmon {with Israeli Couscous with Spinach}
Look at these for just a moment. They are red currants and tonight they are recipe inspiration. When we were growing up, one of mom’s signature party appetizers was Cocktail Franks in Red Currant Chili Sauce. We loved them. I hadn’t thought about them in quite some time until I spotted these little beauties at the market. There was no way I was leaving without them. And so we shall have Red Currant Chili Glazed Salmon over Israeli Couscous with Spinach.

Huevos Rancheros {Kind Of}
While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs. I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst. This mixture took the place of the traditional tomato-chili sauce and refried beans. You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.

Prime Rib Roast {Christmas Eve Dinner}
I’ve been craving Prime Rib for months. Which means I’ve been talking about it…a lot…for months. And while over the past year special occasions have come and gone…I knew I could only take so much and would, in time, make Prime Rib.

North African Chicken {with Spicy Green Sauce}
It’s hard to believe that just three short months ago I was harvesting my fresh herbs and hanging them by their toes to dry, as we began Autumn Thyme. Now I can hardly wait for Winter Thyme ~ A Spice Exploration. Shortly after Christmas, we’ll be unveiling our new Winter Thyme banner….but for now, I’ll give you a preview of what’s to come. Presenting North African Chicken with Spicy Green Sauce.

Hints of citrus and sweet tarragon & fennel infuse flavor into this Slow-Roasted Salmon dish. This luxurious recipe from Food & Wine is wonderful for the holidays. To begin, a seasoning mixture is made from melted butter, thinly sliced garlic & shallots, ground fennel seeds, fresh tarragon & lemony thyme, lemon & orange zest, and coarsely ground pepper.

Roasted Vegetable Orzo {Featuring Delicata Squash}
Roasted Vegetable Orzo {Featuring Delicata Squash}, inspired by this wonderfully delightful recipe from 101 Cookbooks. As I’ve said many times before I eat with my eyes first and the vision of these beautiful roasted delicata squash is what drew me to this recipe.
