Curried Chicken Salad & Avocado with Almonds & Pomegranate.

- 1 cup cooked chicken, chopped
- ¼ cup low fat mayonnaise
- 1 tsp. curry powder
- 2 Tbl. sliced almonds
- 2 Tbl. pomegranate seeds
- 1 scallion, sliced
- sea salt & freshly cracked pepper
- 1 avocado
- Combine mayonnaise and curry powder, then fold in the cooked chicken, sliced almonds, pomegranate seeds, and scallion. Season to taste with salt & pepper.
- Slice avocado in half and remove pit. Divide chicken salad into each half and serve.
