Ingredients
  • 1 cup cooked chicken, chopped
  • ¼ cup low fat mayonnaise
  • 1 tsp. curry powder
  • 2 Tbl. sliced almonds
  • 2 Tbl. pomegranate seeds
  • 1 scallion, sliced
  • sea salt & freshly cracked pepper
  • 1 avocado
Instructions
  1. Combine mayonnaise and curry powder, then fold in the cooked chicken, sliced almonds, pomegranate seeds, and scallion. Season to taste with salt & pepper.
  2. Slice avocado in half and remove pit. Divide chicken salad into each half and serve.
