With summer in full swing, it was time to recreate one of my most favorite Lemony Thyme comfort food recipes. We turned our Greek Chicken Meatloaf into Greek Chicken Burgers. They have all the fresh bright flavors that Greek food brings – lemon, fresh oregano, spinach, feta, aaahhhhh. They are super moist, easy to make and reheat beautifully.
Coconut lovers unite! This Coconut Shrimp Fried Rice is bursting with fresh coconut flavor (and all the other reasons we love fried rice). This also happens to be the first NEW recipe published on Lemony Thyme in a really long time. It took spotting these young coconuts at a local farmers market to bring me back!
I made this Autumn Thyme Wedge Salad a couple weeks ago and have been dying to share it with you. It has so many wonderful seasonal flavors that it sings of Autumn Thyme.
