One benefit of food blogging is that from time to time we have to make a dish more than once. Especially if it’s a holiday themed recipe that needs to get out ahead of time. Pad Thai is my go-to Thai take-out dish. I love everything about it. Traditionally this is a noodle dish and who doesn’t love noodles, especially when they are stir-fried with eggs! Yum!!
