Happy Father’s Day & Eggs Benedict {from one year ago}
One year ago, on Father’s Day, I published my first post on Lemony Thyme. A website only I knew existed, I was writing to myself. It was scary intimidating at first. I had no real plan other than to bottle my creative passion in one neat and tidy place. A somewhat private place where family and friends might visit. That’s what I thought and hoped for a year ago.

Grilled Swordfish with Lima Bean & Herb Butter
Grilled Swordfish with Lima Bean & Herb Butter. I haven’t always loved Swordfish. I remember it being dry and underwhelming, so frankly I avoided it. Too many other choices that I knew I loved. I’ve shared recently that fish speak to me. There’s really no other way to explain how I can approach a massive row of freshness and choose….that one, I’ll have that piece of fish. That’s what happened the day I fell in love with Swordfish.

Caprese Grilled Cheese Sandwich
Caprese Grilled Cheese Sandwich. We had to do it. You know we’ve got basil growing faster than a speeding bullet. Add a ball of fresh mozzarella able to leap tall buildings in a single bound. And an Italian bread getting eaten faster than a locomotive…I must act quickly.

Italian Stuffed Mushrooms
I have always loved mushrooms. Raw. Cooked. Stuffed. In Stuffing. In fact, my very first (and only…to date) contribution to a cook book, was a little piece on Mushrooms. Mind you I was 13 and my culinary skills were….non-existent. I plan to share more about this fabulous family cookbook in the near future, but for now I’ll focus on these Italian Stuffed Mushrooms.

Boursin Garlic & Herb Spread
I’m not sure when Boursin Spread became so popular, but as a child I can remember it being served with crackers and other nibbles in the 5 o’clock hour. What I don’t recall was if my mom made it herself or bought it. Flash forward 20 years and I’m certain my sister made it from scratch. She has always been creative and confident in the kitchen. I believe a bit of that has worn off on me.

Guacamole Deviled Eggs {with Crispy Bacon}
Guacamole Deviled Eggs with Crispy Bacon. One week to go before we complete our first year of ‘food blogging.’ A term I hesitated to use for most of this year. On one hand it was hard to put myself in that category, with so many very talented writers, recipe creators, and photography wizards. And on the other hand, I had always thought of a blog as a personal diary of sorts, something I couldn’t envision Lemony Thyme becoming last June. However, as time progressed I began to open up a bit. A simple reference from a friend or family member about something I wrote in a post, felt good. It made me…

Veggie Frittata {Breakfast Burrito or Quesadilla}
“We can sleep til we get up.” That’s what we love about Saturday mornings. We did at least until we got a puppy. Now we “sleep til Scrappy Thyme gets up.” So while I lay in bed this morning waiting for her to call to us, I was thinking about breakfast. And how I might use up the mother load of leftover fresh salad ingredients that had taken over my fridge. That’s when I decided to make a Veggie Frittata.
