Fresh Herb Grilled Chicken {with Basil Herb Butter}
Back before there was a negative stigma associated with a recipe that called for a stick of butter (y’all), we could put away some butter. Growing up as a child I seriously thought butter was a side dish….since we all had our own dish of butter when we sat down to dinner. It’s no wonder we ate every vegetable put in front of us (except Brussels Sprouts…love them now). Over the years we have worked pretty hard to replace some (not all) of that butter with healthier options….olive oil, herbs, lemon juice. Having said that, this Fresh Herb Grilled Chicken with Basil Herb Butter recipe, adapted from the queen of butter Paula Deen, has earned the…

Cuban Tilapia {Third Coast Inspired}
Way back when, when I was much younger, I would frequent a neighborhood hole-in-the-wall kind of place every Friday night (there really were holes in the wall, each with a detailed story). This place was special. It had extreme character and characters, beautifully colorful people and hand-painted murals of them, free flowing spirits and free spirited bar tenders, bathroom walls that told stories through their ‘underwater’ paintings, Calypso music throughout and a patio with thatched umbrella tables overlooking…..the parking lot. And did I mention a kitchen manager that aimed to please. Oh yes, the later in the evening you hung in….the more creative he became. And that is where this Cuban Tilapia recipe was born. One LATE Friday night….many…

Mushroom Bacon Swiss Burgers
Is there anything better than a good burger? Okay yes… there are some things, but on the rare occasion that we actually make beef burgers (vs. turkey or salmon) they are such a huge treat. Whether you lay them on a bed of greens or perched on a toasted onion roll they are amazing. Top them with a slice of nutty pungent Swiss cheese, sautéed mushrooms, and a couple of strips of crispy bacon…. Mushroom Bacon Swiss Burgers = WINNING!!

Southwest Eggrolls with Avocado Dipping Sauce {Chili’s Style}
Every time I make these Southwest Eggrolls they are a hit. And this copycat recipe gets you pretty darn close to the Chili’s restaurant version.

Bloody Caesar Spicy Shrimp Shooters
First it was the Green Bloody Mary, then the Bloody Mary Dressing for our Avocado & Shrimp Salad….both which inspired these Bloody Caesar Spicy Shrimp Shooters.

Bloody Mary Dressing {with Shrimp & Avocado Salad}
Nothing like a good spicy Bloody Mary to wake up the taste buds and catch your attention. Gosh I love them. Now that the whole world is caught in a smoothie, vegenator, super blender craze I envision the Bloody Mary reborn. We’ve already fallen in love with Green Bloody Mary’s and recently enjoyed a version made with Sake as well. I think I need to dedicate an entire post to Bloody Mary’s or better yet cocktail inspired recipes, but for today we’ll focus on this lovely Bloody Mary Dressing.

Chicken Tortilla Soup {Share the Love}
Today we are Sharing the Love at the office in honor of Customer Service Appreciation Week. Sharing the love for our amazing group generally involves food. Food makes us happy. Had a request for Chicken Tortilla Soup….a recipe we perfected a couple years ago. My oh my it’s good. Also sharing my Italian Wedding Soup because it’s one of my all time favorites. And enjoying delicious Chicken BBQ thanks to Bethany. Great day!!

Shark Kebabs {aka Shark Bites}
Today I was given the challenge of coming up with a Shark recipe. Yes I said Shark…as in Jaws (but smaller, teeth removed). What came home from the store was a fresh Shark fillet and a vote of confidence, “I know you’ll come up with something good…and shouldn’t everyone try shark at least once?!” And so the recipe research began. After reading many I began to see a pattern….powerful punchy flavors. Not sure what we’re covering up but I’m all in. Welcome Shark Kebabs with Orange-Avocado Salsa served over Spiced Cashew Rice. Thank you Epicurious and Food & Wine for these great recipes.

Grilled Chicken Tequila Burgers {with Cilantro-Lime Mayo}
Grilled Chicken Tequila Burgers {with Cilantro-Lime Mayo}. Recipe Inspiration. I’ve mentioned before that recipe ideas come to me in many ways. Today for example, I spent my lunch break at the hair salon, a place I love for these three reasons: first I adore my stylist and love hearing about her recent travels and life experiences; second because I always leave feeling refreshed and happy; and third because they have the best assortment of magazines!! Today I left with 16 snapshots of recipes and ideas that I MUST try. My head is spinning with fresh new visions.

Fish Fillet Sandwich {Taste Test}
Please tell me I’m not alone in my love of McDonald’s Filet-O-Fish Sandwich. I must be honest and admit I had let our relationship drift over the last several years…it’s my fault, I blame myself. However, thanks to the new “Favorites Under 400” (calories) campaign our love affair has been rekindled. I’m sure there are critics who will scoff at my admission, but in order to conduct a fair Taste Test I must inform (and warn) my competition of the nature of my personal relationship with F-O-F.
