Grilled Tequila Chicken Burger

Grilled Chicken Tequila Burgers {with Cilantro-Lime Mayo}.

Recipe Inspiration.  I’ve mentioned before that recipe ideas come to me in many ways.  Today for example, I spent my lunch break at the hair salon, a place I love for these three reasons:  first I adore my stylist and love hearing about her recent travels and life experiences; second because I always leave feeling refreshed and happy; and third because they have the best assortment of magazines!!  Today I left with 16 snapshots of recipes and ideas that I MUST try.  My head is spinning with fresh new visions. 

Grilled Tequila Chicken Burger

Tonight however, I owe my recipe inspiration to my Dad in-law (a friend of mine refers to her in-laws as in-loves…that’s really much more appropriate for my in-loves as well).  While visiting on Sunday, Dad showed me this recipe for Grilled Chicken Tequila Burgers in this month’s issue of Southern Living and thought it was right up my alley.  We just slightly tweaked the recipe by adding 1 Tbl. olive oil for improved moisture and substituted sliced tomatoes for red bell pepper.

Tonight was the trial run and we give them thumbs up for flavor.  With each bite a new ingredient spoke up…the lime zest, jalapeno, cilantro, even the slightest hint of tequila.  And let’s not forget the Cilantro-Mayo…perfect.  Yep, we’ll be making these again very soon and this time we’ll invite Mom and Dad for dinner!

Grilled Tequila Chicken Burger

Note:  Tequila Burgers do have tequila in them and just like the wine you braise with….choose something good (that you’d actually drink) but it doesn’t have to be great.  Let’s just say the mini Patron bottles may have been a bit more about character and product placement. 

Grilled Chicken Tequila Burgers
These burgers are packed full of flavor and got a thumbs up at our house!
Recipe type: Burgers
  • • 1 pound ground chicken breast
  • • 1 Tbl. olive oil
  • • 3 Tbl. chopped fresh cilantro
  • • 2 chopped garlic cloves
  • • 1 seeded and chopped jalapeño pepper
  • • ½ cup panko (Japanese breadcrumbs)
  • • 2 Tbl. tequila
  • • 1 tsp. lime zest
  • • ¾ tsp. salt
  • • ½ tsp. pepper
  • • ¼ tsp. soy sauce
  • • Sliced tomatoes
  • • Sliced onions
  • • 4 hamburger buns
Cilantro-Lime Mayonnaise...
  • • ¾ cup mayonnaise
  • • 1 tsp. chopped fresh cilantro
  • • 1 tsp. chopped fresh chives
  • • 1 tsp. lime zest
  • • 1 tsp. fresh lime juice
  1. Preheat grill to 350° to 400° (medium-high) heat.
  2. Pulse ground chicken, olive oil, cilantro, garlic, and jalapeño pepper in a food processor 3 to 4 times or until combined.
  3. Add panko, tequila, lime zest, salt, pepper, and soy sauce; pulse until combined. Shape into 4 patties.
  4. Grill chicken patties and onion slices, covered with grill lid, 4 to 5 minutes on each side or until a meat thermometer inserted in thickest portion registers 165°; remove from grill.
  5. Serve burgers, tomato slices, and onions on buns with Cilantro-Lime Mayonnaise.
Cilantro-Lime Mayonnaise...
  1. Combine all ingredients and chill.
