Farmers Market Minestrone Soup {Share the Love}
The next time you visit your local Farmers Market have this recipe in the back of your mind. In fact if you arrive near the close of the market, which means the ‘prettiest’ veggies will have been picked over, you’ll often find farmers willing to let their remaining produce go at a reduced price. Perfect for making a giant batch of Farmers Market Minestrone Soup which allows you to {Share the Love}.

Farmers’ Market Favorites
I could hardly wait for today to finally get here. It’s opening day for our local Farmers’ Market. Every Wednesday and Saturday from now through October we will be buying our fresh produce from local farmers. I could hardly wait to get there, then I could hardly wait to leave so I could show off my bounty. Recipe inspiration came streaming through my mind as did recipes past where fresh vegetables transformed the dish. That’s when I decided to round-up all my Farmers’ Market Favorites in one post.

My Go-To Guacamole Recipe
Did you know that Guacamole is one of the most popular Super Bowl snacks?! Right up there with Chicken Wings! But it’s been around long before the big game ever took place. Guacamole dates back to the 1500’s and due to its nutritional value was a staple in the Aztec diet, although they called it āhuacamolli – which translated means “avocado sauce.”

Reese’s Peanut Butter Bars
Reese’s Peanut Butter Bars. That’s what the experts said I should call these two-bite “Change Your Life” treats. Said in my best Steel Magnolias accent, which I happen to be watching tonight. We’ll come back to that.

Stuffed Artichokes
I was walking with a friend last week and out of the blue… ‘stuffed artichokes’ to which I emphatically replied ‘yes’ love them. Then I couldn’t get them off my mind. Are you an artichoke fan? Steamed, then pull their lushes pedals off one by one and dunk them in butter or better yet a mayo/mustard dip?? Are you with me?

Cheesy Jalapeno Grits Casserole
I’m off this week. Off from work. My day job is running a door lock and hardware company. Strike that. My day job is motivating and hopefully at times inspiring my work family. Ultimately we all want the same, from work. It’s where we make our living, which funds our passions. This recipe has nothing to do with that. But I wanted to share where I am right now.

Easy Pad Thai {with Spaghetti Squash}
Pad Thai is my go-to Thai take-out dish. I love everything about it. Traditionally this is a noodle dish and who doesn’t love noodles, especially when they are stir-fried with eggs! Yum!! Today I decided to lighten it up a bit, so I substituted roasted spaghetti squash “noodles” for the classic rice noodles. Results. Two thumbs up in this house.
