Cowboy Caviar & A Country Christmas Party
Whipped up a batch of Cowboy Caviar in honor of tonight’s Country Christmas themed Annual Company Party. I can not wait. While we work (and play) hard all throughout the year, the Christmas Party is a chance to spend an evening with my second family and their spouses. And inevitably make memories that will last us until next year’s party :) Did I mention, I can not wait!

Chocolate Covered Almond Coconut Candy Bars {Adventures in Chocolate}
Without a doubt, my favorite check-out isle candy bar is the Almond Joy. Coincidentally, the name I chose for Secret Santa at the office also listed Almond Joy as her favorite ‘sweet’ treat. And since Day #2 is to deliver something sweet I think it’s only fitting that I make these Chocolate Covered Almond Coconut Candy Bars (for her of course).

Thai Red Curry Carrot Soup
Here we go again with Red Curry Paste. I simply love how it’s flavor influences dishes. It’s not spicy hot, just full of wonderful fragrant ingredients. Today I was consumed by a craving for Thai Red Curry Carrot Soup. It began early this morning and by the time noon rolled around my mind was made up. Home I went and within 30 minutes we were enjoying this heavenly soup….it is that easy to make and oh so good.

As we stared into our refrigerator full of Thanksgiving leftovers it was clear….enough is enough. And we declared this week to be Eat Out of the Fridge/Pantry Week.

Pumpkin Rum Muffins {with Maple Pecan Glaze}
We had a wonderful Thanksgiving dinner complete with Pumpkin Pie….thanks to Shelby. She found a delicious sounding recipe for Paula Deen’s Pumpkin Rum Pie which called for 1 9″ Pie Crust. After filling the crust, there was at least as much filling still in the bowl. So today we present you with Pumpkin Rum Muffins with Maple Pecan Glaze. The pie was delicious by the way, even for the non-pumpkin pie lovers.

Pomegranate, Zucchini, and Avocado Salsa {Share the Love}
A couple years ago, just before the Christmas Holiday season began, I sat down on my living room rug with literally years of issues of Martha Stewart Living magazine scattered around me. I began to bookmark recipes (and decorating ideas) I wanted to try. It is our family tradition that Christmas Eve dinner is comprised of finger foods….some annual favorites, but also a chance for us to experience new recipes. I’m sure I turned down page corners on at least 100 recipes that year, and one of the few that actually made the cut was Pomegranate, Zucchini, and Avocado Salsa.
