I decided to take my favorite slow cooker pot roast recipe and give it a complete makeover. Bing, bam, boom. Korean BBQ Beef. Simple as that and oh so delicious.
Tender melt in your mouth beef swimming in a delicious sauce. The marinade is slightly sweet with familiar flavors of ginger and sesame. While the slow cooker method is not traditional for Korean BBQ it certainly turned this into a fantastic weeknight meal. Serve over a bed of white rice or shredded and served in lettuce wraps. Either way you’ll want a drizzle of the heavenly sauce. Enjoy!
- 1 (2-1/4 pound) beef chuck roast
- ½ cup soy sauce
- ¼ cup ketchup
- ¼ cup brown sugar
- ¼ cup apple juice
- 2 Tbl. sesame oil
- 1 Tbl. Mirin
- 1 tsp. grated ginger
- 2 garlic cloves, minced
- 1 onion, thinly sliced
- white rice or lettuce wraps for serving, optional
- thinly sliced scallion, carrots and cabbage for garnish
- Place all ingredients in the slow cooker. Cook on LOW for 8 hours.
