Glorious maple pecan encrusted salmon over a bed of crisp romaine with hard boiled eggs, fresh tomatoes, homemade croutons and shaved Parmesan cheese. As delicious as you could find in a restaurant, enjoyed in the comfort of home.

Vietnamese Beef Pho. Let me just say this about that. I don’t think I’ve ever delivered so much flavor with so little effort. When I got home from work I assembled everything I needed, put the broth and seasoning on to simmer, all in about 5 minutes. I did also pop our beef filet into the freezer, which later helped with getting a nice thin slice.

Watercress Pesto. I had seen a recipe in a cooking magazine where they sprinkled watercress leaves over the top of the dish. It made such a pretty presentation that I was certain I too would do this. I bought a bag of watercress with good intention. Forgot all about it until my weekly Saturday morning fridge cleanout.

Blueberry Basil Lemonade. One summer when we were small we begged and begged our mom to let us have a lemonade stand. Please mom. We promise we’ll do all the work. As I recall I was about 5 and my sister Sarah 8. We had big plans but were lacking in ‘how to start a business’ experience and the start up capital required, not to mention knowing how to make lemonade. Mom somehow was able to distract us time after time, until we eventually stopped asking.

I was feeling a little sentimental and decided to pull out my treasured family cookbook, The Moulding Board. Included are recipes dating as far back as the early 1900’s intermixed with pages from my Great Grandmother Nannie’s 1929 diary. Such a wonderful way to get a glimpse of what life was like in Newtown, CT all those years ago. Now on to the Cheese Scalloped Corn Casserole recipe, which happens to be my sister Sarah’s contribution to the collection.

I instantly fell in love with this wonderful Benny Sauce marinade almost 15 years ago. Paired with boneless turkey breasts, it has become a favorite of mine.
