They were such a welcomed meal that so warmed our souls at that moment (and have every time I’ve made them since). They are mild yet so full of flavor that they keep you coming back for more.

Found a fantastic and super easy recipe for tomatillo sauce which fit right into my plan. I’ve been wanting to make ‘Red’ Enchilada Sauce which we LOVE…but with an abundance of tomatillos in my fridge…green was the more practical approach. So Chicken Enchiladas with Tomatillo Sauce it is.

Not only do we enjoy a mouth-watering chicken dinner each week, but we then turn bones into broth, and broth into amazing soups and stews. It was B who first discovered Chicken in Milk by Jamie Oliver. In an attempt to change it up each week (Ooo I like that…the “Chicken Change Up”) he began to read endless websites searching for new and interesting whole chicken recipes. Baked Cod with Montpellier Butter
Cod is a wonderfully mild white flaky fish. It’s happy seasoned with anything from fresh herbs to punchy marinades. It’s beautiful baked or grilled and when leftover it begs to be the star in a batch of fish chowder. After recently learning about freezing fresh herbs in butter or olive oil, I began to do a little compound butter research and decided Montpellier Butter would be the perfect pairing with our baked cod.

Wienerschnitzel {Oktoberfest Inspired}
Less than 50 miles North of us, nestled in the Blue Ridge Mountains, on the Chattahoochee River, sits Helen, Georgia….a re-creation of a Bavarian alpine village complete with cobblestone streets, hundreds of specialty shops, and all the beer and brats you could eat. Each year during the months of September and October, Helen hosts the longest running Oktoberfest in the United States. In honor of Oktoberfest we’re making our favorite German recipes: Wienerschnitzel, Spaetzle, and Sweet and Sour Red Cabbage.

A match made in heaven. That’s what Jennifer & Jason are. The love that surrounded them on their big day was so real you could touch it. It came from their families, separated by an isle but clearly united by love. We their friends were overflowing with joy for them as they said their I Do’s. And as they turned to face us for the first time as husband and wife their beautiful smiling faces and interlocked hands lifted us all.

I know I can’t claim everything as comfort food but….buttery baked salmon, mild snow peas, pasta tossed with an ultra creamy tarragon sauce….muah!!

Every day on my drive to work I’m amazed at how it has transformed the space the Farmers’ Market occupied all summer long.
