A ‘Loaded’ Baked Potato doesn’t have to mean loaded in fat and unwanted calories.  Our Southwest Baked Potato {with Cottage Cheese} is flavor packed and naturally low-fat.  This my friends is a weekday lunch that will not only carry you through the 3 o’clock pitfall hour, but one that will carry you out of the office at 5 o’clock feeling great.

I simply kicked up my favorite Fresh Tomato Salsa by adding black beans and corn, then spooned that over my Perfectly Baked Potato, topped with Fat Free Cottage Cheese.  You’ll love the cool cheese as a contrast to the zippy salsa.  This is a guilt-free plate of Win.

Ingredients
  

  • 1 Perfectly Baked Potato
  • 1/2 cup Fresh Tomato Salsa
  • 1/4 cup fresh or frozen corn kernels thawed
  • 1/4 cup black beans drained and rinsed
  • 4- ounces Fat Free Cottage Cheese
  • fresh cilantro

Instructions
 

  • Preheat oven to 400 degrees. Scrub potato under running water. Pierce several times with a fork. Bake for one hour or until soft.
  • Slice down center of potato and fluff potato with a fork. Combine salsa with corn and black beans. Top potato with cottage cheese and salsa mixture. Garnish with fresh cilantro.
