Baked Potato {with Tomatoes, Basil Pesto & Fresh Mozzarella}
Baked Potato {with Tomatoes, Basil Pesto & Fresh Mozzarella}. Fresh Basil Pesto might as well be classified as butter. Because when you spoon it onto a piping hot potato, it melts into amazing. Now add fresh diced tomato and shredded mozzarella. This might just be as good to me as say Pizza Margherita with a Perfectly Baked Potato crust.

Herb Infused Polenta {with Poached Eggs}
Herb Infused Polenta {with Poached Eggs}. Not exactly what I had in mind as I entered the kitchen this morning. However sitting here just minutes after enjoying it for Sunday brunch I’m in love with the flavors lingering on my tongue. They’re familiar and comfortable. Equally as exciting to the taste buds is their aroma. They are fresh herbs.

Baked Sweet Potato {with Sautéed Mushrooms & Spinach topped with Jarlsberg Cheese}
Baked Sweet Potato {with Sautéed Mushrooms & Spinach topped with Jarlsberg Cheese}. Recently someone asked me, “with all the cooking you do, what is your favorite ‘type’ of food or genre if you will….American Favorites, Italian, Mexican, Mediterranean, etc.” I thought about it for a minute, I certainly love most ALL food….but what came out of my mouth was absolutely accurate. “I love vegetables most.” All vegetables, prepared most ways. I could give up Italian if I had to (even though I’d miss it) but I could NOT give up veggies. I just couldn’t do it.

Greek Salad
It’s crazy to admit that this is the first time I have made a Greek Salad. I’ve loved every one I’ve ever enjoyed at a restaurant. For me it’s the combination of fresh ingredients with big bold flavor personalities, that somehow get along really well. No competitiveness here. I like it!!

Veggie Pancakes Topped with Fried Eggs
Veggie Pancakes with Fried Eggs. The light coming through our back windows this morning is brighter than usual. The angle in which it reaches the kitchen creates a spot light. On to the stage steps these gorgeous veggie pancakes. I did not plan for this. When I opened the refrigerator door I was reaching for coffee cream. Instead out came zucchini, summer squash, asparagus, carrots and scallions.

Baked Sweet Potato {with Steamed Asparagus, Goat Cheese & Fried Egg}
Baked Sweet Potato {with Steamed Asparagus, Goat Cheese & Fried Egg} While many people enjoy hash browns or home fries for breakfast, we typically don’t think of a baked potato as a go-to morning meal. I’m here to tell you this dish has everything you need (with the exception of a side of bacon) and weighs in at under 250 calories.

Pappardelle with Lemony Thyme Roasted Mushrooms
Pappardelle with Lemony Thyme Roasted Mushrooms. When I saw this gorgeous Baked Lemon & Thyme Mushrooms recipe from Simple Provisions I knew in an instant that it would become a favorite. But instead of serving it as an appetizer with crostini, why not make it a Meatless Monday Meal.

Broccoli Cheddar Soup
Broccoli Cheddar Soup. We are on a mission to add at least two new soups per week to the pages of Lemony Thyme. Below may have something to do with this!!!
