That makes this Baked Sweet Potato {with Steamed Asparagus, Goat Cheese & Fried Egg} a Healthy Choice for any meal of the day. Simply begin with a Perfectly Baked Sweet Potato, that is naturally low in fat, high in Vitamin A and beta carotene. Then top with a fried egg (non-stick skillet and olive oil spray) and steamed fresh asparagus drizzled with a little EVOO and a sprinkle of sea salt and freshly cracked pepper. Finish with a spoonful of crumbled goat cheese. Delicious.
