Pecan-Crusted Trout
The trout was so fresh and beautiful at the seafood counter today that I couldn’t resist, even without a plan for how to prepare it. Pan sautéed trout is what first came to mind. I have a weakness for this wonderfully mild fish, especially when it’s sautéed in butter. To kick it up I decided on Pecan-Crusted Trout, which fit right in with our low-carb eating.

Cajun Jambalaya Skewers
I had such fun making our Low-Country Boil Skewers that I thought we’d try a new twist. Meet Cajun Jambalaya Skewers. Since I’ve read that no two Jambalaya recipes are the same, I took some liberties with the ingredients. Don’t think authentic. Instead think fun and flavorful.

Sesame Chicken {Lower Sodium}
Sesame Chicken. This recipe recreation was too good not to share. We recently made a fabulous dipping sauce for some sweet potato steak fries and the key ingredients were agave nectar and soy sauce. One taste of it and my love for sesame chicken came rushing back.

Southwest Baked Potato {with Cottage Cheese}
A ‘Loaded’ Baked Potato doesn’t have to mean loaded in fat and unwanted calories. Our Southwest Baked Potato {with Cottage Cheese} is flavor packed and naturally low-fat. This my friends is a weekday lunch that will not only carry you through the 3 o’clock pitfall hour, but one that will carry you out of the office at 5 o’clock feeling great.

Isle of Palms Burger
Isle of Palms Burger inspired by Pawley’s Front Porch, Columbia, SC As we turned on the TV to watch Saturday afternoon college football, the analyst came on with his pregame show. Every week he visits a local restaurant in the town of the home team and shares his dining experiences. What an awesome job he has.

Skillet Cheesy Ravioli Bake
If you’re looking for a ‘family friendly’ one-pot-wonder our Skillet Cheesy Ravioli Bake might just be the one. The ingredients are added and cooked in layers, then into the oven for a final bake.

Crab Cakes {with Remoulade Sauce}
When life gives you jumbo lump crab meat…. I’d like to say that I did great research to find the most incredible Crab Cake recipe or that I make Crab Cakes on a regular basis and this is my original recipe. But instead I found this wonderful recipe right under my nose.

Low-Country Boil Skewers
I adore Low-Country Boils. Having said that I can count on one hand how many times I’ve had the pleasure of enjoying them. When I have, it has been at a neighborhood gathering or a backyard get together where there was a crowd to feed. Today I came up with a fun way to prepare it for two (or for twenty-two).

Sushi Stack
I must admit I’m quite proud of my Sushi Stack. Not only was it delicious, but it looks so pretty in a picture. And we all know how important that is :) Every time I visit Whole Foods I look forward to winding my way through the store, ultimately reaching the seafood counter. They don’t always have sushi grade tuna but on this day they did. What a huge treat and such a delicacy.

Baked Sweet Potato {with Curried Chicken}
A Perfectly Baked Sweet Potato is like a soft woven picnic blanket. No matter what you lay on top of it, the result is dreamy. We made Chicken Butter Masala for dinner….speaking of dreamy. I’ve yet to capture this recipe and share it, however I’ll give you a shortened version for purposes of Baked Sweet Potato {with Curried Chicken}.
