    Baked Buffalo Chicken Meatballs

    February 1, 2013 / 2 Comments

    Chicken Wing shortage?  Now that would be a ‘fowl play’ just two days before Game Time.  It is estimated that American’s will eat 1.23 billion chicken wings this Super Bowl weekend or an average of 4 wings per person.  There’s no question we LOVE our Super Bowl food, so much so that it has become the 2nd largest eating holiday, after Thanksgiving.  While I think the chicken wing shortage story has been refuted by the National Chicken Council, let me offer up a Chicken Wing alternative just in case.  Baked Buffalo Chicken Meatballs.

    Corn & Potato Chowder with Bacon {Eat Out of the Fridge/Pantry Week}

    November 30, 2012 / 15 Comments

    Day #6 of Eat Out of the Fridge/Pantry Week….and we’re still cooking strong.  As you can imagine creating new dishes or testing recipes every night leads to an abundance of open ingredients that begin to take over the Fridge/Freezer and Pantry.  As we stared into our refrigerator full of Thanksgiving leftovers it was clear….enough is enough.  And we declared this week to be Eat Out of the Fridge/Pantry Week.

    Horseradish & Herb Encrusted Grouper

    November 27, 2012 / 3 Comments

    Horseradish & Herb Encrusted Grouper is a simple and delicious way to elevate the flavors of this mild fish. Grouper is a lovely firm white fish, which makes it sturdy enough for grilling, wonderful broiled for a Grouper Sandwich, or served our favorite way…baked with a horseradish & herb bread crumb topping.

    Baked Cod with Montpellier Butter

    October 22, 2012 / 5 Comments

    Cod is a wonderfully mild white flaky fish.  It’s happy seasoned with anything from fresh herbs to punchy marinades.  It’s beautiful baked or grilled and when leftover it begs to be the star in a batch of fish chowder.  After recently learning about freezing fresh herbs in butter or olive oil, I began to do a little compound butter research and decided Montpellier Butter would be the perfect pairing with our baked cod.

    Triple Olive Tapenade {with Roasted Red Pepper}

    August 31, 2012 / 4 Comments

    Leftover olives…what to do? what to do?  A quick search found this fabulous tapenade recipe by Former Chef.  The recipe calls for kalamata, green, and Californa ripe olives but you can use any combination you have on hand.  The ripe olives add a nice balance to the punchy kalamatas.  You’ll also want to add roasted red pepper.  These can be bought in a jar but roasting them at home is super easy.

    Baba Ghanoush {Eggplant Dip}

    August 18, 2012 / 2 Comments

    While the recipe is delicious, I have since discovered a much easier and equally tasty version. Check out my Easy Baba Ghanoush recipe here. Eggplant was the abundant ‘on sale’ item in the fridge today.  I had bought two varieties at the Farmers’ Market but had yet to come up with a plan. While fresh picked eggplant is one of the most beautiful fruits of the garden, once cooked….is not always as good looking.  I did a quick Internet search for ‘pretty images’ of eggplant recipes and came across several for Baba Ghanoush.  I’d heard of it, maybe even enjoyed it in a restaurant, but certainly had not made it from scratch.  I decided to try…

About Libby

Hi, I'm Libby and welcome to Lemony Thyme. I hope you'll enjoy this collection of recipes, eating experiences, and food photography. My cooking abilities rose to a new level when I started incorporating fresh herbs. I began to understand the term ‘layers of flavor’ and found myself deconstructing dishes with my tongue to identify each ingredient.
