    Pan Seared Sage Brown Butter Scallops {with Sweet Pea Puree}.  Not sure if I need to say more. LOVE the Sea Scallops, they are such a huge treat.  Simply pan searing them with a sprinkle of salt & pepper is all they really need….but huh huh we gave them a little more.  If you’re going to sear them in butter anyway, why shouldn’t it be in that seductive favorite Sage Brown Butter.

    The BEST Meatloaf I’ve ever had was one I called The Collaborative Meatloaf.   On that night each cook took turns adding an ingredient, the rule was you could only add one ingredient per turn and you must disclose what you added.  We made it the way REALLY Good Meatloaf should be made….by starting with good quality meat, adding fresh veggies, binding ingredients like eggs, milk, bread, herbs & aromatics, and then a few secret ingredients.  The problem with our original Collaborative Meatloaf  recipe is we also took turns making cocktails and I’m afraid the ‘secret’ ingredients will remain a secret.

    I’ve recently read some articles on a growing movement to bring Home Ec back to schools.  Healthy eating and knowledge of nutrition being the core reason, self-sufficiency and cost savings also getting a mention.  And while I wholeheartedly agree, I propose another consideration for teaching teens and young adults the ‘basic’ life skills taught in a Home Economics classroom.  Creativity. Cooking, like sewing or painting or wood-working, is a way to express yourself artistically…and a wonderful stress-reliever.  So don’t get me wrong, I do believe ‘home’ is the best place to learn these skills, but it was in my 8th grade Home Ec class where I learned to make a Basic White Sauce.  A skill just as valuable in my life today as…

    We just love sizzling Steak Fajitas served with all those delicious toppings.  And nothing goes better with them than a side of Mexican Rice.  I have read at least a dozen recipes for both Spanish and Mexican Rice in an attempt to find one as close to what we get from our favorite Cantina.  I had no idea there was a difference between them, but from what I can tell while they both have tomatoes, Mexican rice also has onion and peppers, and is seasoned with cumin.  Where Spanish rice uses saffron to get it’s orange-red color.

My cooking abilities rose to a new level when I started incorporating fresh herbs. I began to understand the term ‘layers of flavor’ and found myself deconstructing dishes with my tongue to identify each ingredient.
