Three Cheese Mac ‘n’ Cheese {Grilled Cheese Sandwich}
It was quickly becoming evident that my attempt to share a different grilled cheese recipe each day in April (National Grilled Cheese Month) was going to fall short by about 5 days. What’s a girl to do?
I called on the younger generation of my family for a little recipe inspiration. The texts starting coming in fast and furiously. First from my niece Maya “Three cheese” followed by “Mac ‘n’ cheese grilled cheese.” Why not combine them into Maya’s Three Cheese Mac ‘n’ Cheese {Grilled Cheese Sandwich}.
When I asked what three cheeses she’d like, without hesitation she replied American, Swiss and mozzarella. So there you have it. This combination made a wonderfully creamy and mild mac ‘n’ cheese. We decided to give our Three Cheese Mac ‘n’ Cheese Grilled Cheese Sandwich a little flavor boost, so we used Smoked Cheddar & Jalapeno Beer Bread and added crispy bacon slices.
From 1200 miles away I got the approval I was looking for from Maya. If I can’t deliver it to her personally, perhaps putting her recipe inspiration in print will bring her that much closer to enjoying Maya’s Three Cheese Mac ‘n’ Cheese {Grilled Cheese Sandwich}.

Three Cheese Mac ‘n’ Cheese {Grilled Cheese Sandwich}
Ingredients
For mac ‘n’ cheese…
- 2 ounces cooked elbow macaroni
- 1 Tbl. butter
- 1 Tbl. flour
- 1 cup milk
- 2 ounces American cheese shredded
- 2 ounces Swiss cheese shredded
- 2 ounces mozzarella cheese shredded
- 1/8 tsp. cayenne pepper or to taste
For grilled cheese…
- 4 slices bacon cooked crispy
- 4 slices flavorful bread such as Smoked Cheddar & Bacon Jalapeno Beer Bread
- butter for pan grilling
Instructions
For mac ‘n’ cheese…
- In a saucepan melt butter over medium heat. Dust in flour and whisk for 2 minutes until thick and bubbly. Slowly pour in milk while whisking. Allow to come to a boil then remove from heat; add in shredded cheeses and whisk until smooth. Season with cayenne pepper. Fold in cooked elbow macaroni.
For grilled cheese…
- Meanwhile, cook bacon in skillet until crispy. Drain on paper towels. Pour off bacon drippings. Add a little butter to skillet and place bread slices in pan. Grill until lightly browned.
- Top two slices with a generous scoop of mac ‘n’ cheese and two slices of bacon. Add top bread slices and gently pan grill.
